I went to a local market place and found Blue Potatoes. Looked up recipes and found you can make them mashed or roasted. Unsure which method I am going to try.

I loved to grow them and did so for a number of years. They are more of a novelty, I think, than anything, but I did like them mashed. They don't keep that deep color, they turn lighter blue (so does the water) and they have a faint "beet taste" about them. All that being said, I still think they are fun and looked great on my blue willow-like plates! A real entertaining difference from boring old white potatoes.

I get them from time to time - I think they're fun! I mashed them just like I do regular potatoes, with butter & milk. Also just boiled them & cut 'em up.

I cut them into chunks with the skins on and boiled them. If they were small enough, I left them whole and boiled them. Then, cut them up and serve with melted butter and chives. Fun food!

My kids always want blue potatoes on the 4th of July. It's one of the silly things we do. Like heart shaped pizza on Valentine's Day.

I just seen these prepared today on a cooking show. They cut them up into chunks, layed them on foil, drizzled them with olive oil, added minced garlic, basil, salt and pepper and the sealed the foil and baked them until tender. They looked really good!!!

I have had them and they are great, the kids loved the look of them, though some of the younger nieces and nephews wouldn't touch them,
You can do that with regular potatoes as well. or another way that is fast, cut them up, toss with a little italian dressing or other favorite (it has the oil and seasoning already in it) put them into a pan, cookie sheet works or or other oven safe pan and back. (if I put them in foil I like to toss in some onion as well) |
