I need to make a couple of breakfast casserole's for Christmas morning and I don't have a favorite recipe. Would you please share some of your favorites?
I have tried a couple that used hash browns and even tater tots instead of bread. I also really like the idea of using green chillies. I would love to see all kinds of different recipes Thank you!!! |
I make Quiche Lorraine using a recipe that my mama used.
favorite pie crust recipe Bake pie shell for 10 minutes, remove from oven and add filling. 8 slices bacon, cooked and chopped 1/2 c chopped onion 1 cup shredded Swiss cheese 6 eggs, beaten with 1 cup whipping cream salt and pepper to taste layer the bacon, onion and cheese in the bottom of the crust, pour egg mixture over the top. Bake at 375 until a knife inserted in middle of pie comes out clean, 45 to 60 minutes. |
My husband thinks that the breakfast casseroles with the hash brown bottom crusts are too "wet". I now use crescent rolls. Press into the bottom of a 9x13 pan. Be sure to seal all seams in the dough. Add 1 lb. pre-browned bulk pork sausage, and the veggies and cheese of your choice. I like to use 2 cups of shredded cheddar. Then beat 8 to 10 eggs with some milk and pour over. Bake at 375 for about 40 minutes or until done.
Our grandkids love this. I'm usually up before everyone in the mornings, so I put this together and in the oven and then have it baked by the time everyone else starts stirring. I brown the pork sausage the night before and refrigerate it. Our daughter has even made this for supper and the kids ask for it all the time. Sue |

MEXICAN CASSEROLE 1 16 oz container sour cream 1 8 oz pkg cream cheese 2 eggs 2 cans cream of chicken soup 1 large onion, chopped 1 small can olives, chopped 1 small can chopped green chiles 1 cup cooked chicken, tuna, or turkey, sausage or chorizo chopped 1 8 oz pkg Monterey Jack or Cheddar cheese, shredded Mix together sour cream, cream cheese, eggs, cream of chicken soup, chopped onion, olives (optional), green chillies, chicken, tuna or turkey (add more than called for if desired). Spread mixture evenly in a 9x13 pan glass or earthenware casserole dish. Top with shredded cheese. Cover and bake 1 hour 350 degrees. Can be frozen and cooked later or cooked and reheated. A metal 9x13 pan takes longer to cook than a glass one, so bake it slightly longer if you use a metal pan. Mixture should be set well when removed from oven. |
I generally do the one Loretta posted. Since I'm lazy, I make it the night before and stick it in the fridge. When I get up, I just pop it in the oven.

Lisa, don't you do that with most of the casserole recipes? That's the idea for a busy morning, fix the night before and pop in the oven in the morning!!

Jim's Gem........this is my favorite Christmas breakfast......must sit 24 hours so one can relax on Christmas morn and ope gifts while this bakes....it is so yummy!
CHEESE STRATA 10 slices white breat (no crusts) 1/3 c soft butter 3 c sharp cheese, grated 8 slightly beaten eggs * 3 c milk * 1 t salt * 1 t dry mustard * ½ T parsley * pepper *.......................*BEAT TOGETHER Spread butter on bread, cut each into 4 strips. Butter 2-qt casserole and make alternate layers of bread and cheese. End with cheese layer. Pour egg mixture over bread and cheese layers. Refrigerate at least 24 hours....)wrap in saren wrap)........ Remove from refrigerator 1 hour before baking. Bake 40 – 50 minutes @ 350 degrees. Brocolli, mushrooms or ham may be placed after 1st layer of bread or canned onion rings on top. I imagine that you could add your choice of green chillies is you prefer....either alone or with anything else....... if you try this, I know that it won't be your last time !!!!! |

Here are a couple of recipes I've used.
#1 For a 9 x 13 pan--melt a stick of margarine; put a layer of biscuits (abt 2 cans) and spread out to cover the bottom of pan so there aren't any holes. Brown 1# of pork sausage and spread out over biscuit crust. Scramble up about 9 eggs, salt and pepper to taste and pour over top. Sprinkle shredded cheddar cheese over top of eggs. Bake at 350 degree for abt 30 minutes until done. #2 For an 11 x 13 pan--Spray with Pam or any nonstick spray. Take whole green chilies, drained and split open (abt 9 sm. cans). Layer green chilies and shredded cheddar cheese (abt 2-3 layers). Shake up 1 lg or 2 sm egg beaters and pour over top. Sprinkle cheese on top. Bake 350 degrees abt 40 min or until knife comes out clean like with a cake. Enjoy! |

I know this is way past when you asked for recipes, lol,but I am in the middle of dinner right now - fixing breakfast enchilda's!
I take the flour taco shells, heating them a tad bit in microwave.. I mix up eggs like scrambled, but I saute first whatever veggies, and or meat I have on hand - smoked sausage, bacon, ect - and for us, as many fresh veggies as possible - we have a huge garden, so always have veggies in the summer/fall.. zuchinni, onions, mushrooms ( no, dont grow them, lol ), peppers, ect... add those to the egg mix as it scrambles.. then, spread some salsa in the bottom of a casserole dish to coat .. Lay a shell down, spread egg mix on it, plus cheese in whatever flavor you like - pepperjack, cheddar,ect.. add a touch of salsa, and roll tightly.. continue to do this till all shells are gone, or enough to feed your family. After rolling them , and putting in dish, spread more salsa all over the tops of the shells, and more cheese to generously cover.. Cover with foil, and bake for about 25 minutes, or until melted, and hot.. so yummy!! |

it always is.. so many ways to fix it, and if I had my drothers, I would leave out the meat and only fill with veggies! haha..
