Breakfast ideas needed
Hi everyone. I'm having unexpected (but welcomed) company this weekend. I need to come up with meals. I'm ok except for breakfast foods. Recently I saw a recipe for a breakfast egg muffin. The first thing you put in the muffin tin was a Pillsbury biscuit then eggs, etc. I can't find it anywhere. I was hoping someone here could help me find that recipe or some other quick, yummy breakfast foods.

Sorry, can't help with that one but I do have a recipe for 'creme breule french toast'. It's not particularly quick but you can make it up the night before and then pop it in the oven in the morning after reaching room temp. Let me know if you're interested and I'll pull the recipe. It's quite rich.

Ree says you can put whatever you want in this, make the custard mixture, refrigerate overnight and bake in the morning. It really is wonderful. And EASY |

Creme brulee french toast
1/2 c butter 1 c brown sugar 2 tbsp maple syrup 1/2 tsp rum extract 1 loaf country style (french/italian) bread 6 eggs 1 3/4 cup half & half 1 tsp vanilla 2 tsp Grand Marnier 1/4 tsp salt Butter 9 x 13 baking dish. In small saucepan over low heat melt butter with the sugar, maple syrup and rum extract. Pur the mixture into baking dish. Cut bread in 1 1/2" slices. Arrange in single layer in baking dish. Squeeze in to fit if necessary. In bowl, whisk eggs; half & half; vanilla; grand marinier; salt. Pour evenly over the bread. Cover with plastic wrap and refrigerate overnight. (flip bread after an hour or so of soaking). In the morning. Let dish sit at room temp for 30 min (or longer). Bake uncovered at 350 for 35-40 min. Serve immediately. Can I tell you this is REALLY YUMMY! |

something I like to make is a a hashbrown/egg dish... You brown a whole package of hashbrowns in a skillet with a little olive oil, beat 6/8 eggs pour over the hashbrowns top with shredded cheddar cheese and cook on low heat until the top is set, then I pop it in a 350 oven for about 5 mins.. I cut it into pie wedges and serve with biscuits or toast.. Serves 6 to 8 depending on the size you cut it... My guests rave about it. very filling

Baked Pecan French Toast
4 large eggs 1 cup milk 1/4 cup sugar 1/4 teaspoon ground cinnamon 1/2 teaspoon vanilla extract 6 slices of French bread cut 1” thick 1 cup of finely chopped pecans 2 tablespoons melted butter maple syrup Place the eggs, milk, sugar, cinnamon and vanilla in a medium mixing bowl and whisk to combine. Spray the bottom of a 9x13 glass casserole dish with non-stick cooking spray. Place the bread slices in a single layer in the dish. Pour the egg mixture over the bread, distributing it evenly. Turn the bread slices once. Cover the dish with plastic wrap and place in the refrigerator overnight. The next morning, preheat the oven to 425 degrees. Remove the dish from the refrigerator and remove the plastic wrap. Drizzle the bread slices with melted butter. Bake for 10 minutes. Remove from oven and sprinkle pecans onto bread. Lemon Coffee Cake
1 can lemon pie filling ½ cup softened butter 1 cup sour cream 1 cup sugar 2 eggs 1 teaspoon vanilla ½ teaspoon vanilla 2 cups all-purpose flour 1 ½ teaspoons baking powder ½ teaspoon salt Crumb Topping ½ cup all-purpose flour ½ cup sugar ½ cup oleo 1 teaspoon cinnamon ½ cup chopped nuts (optional) Cream butter, sour cream, sugar, eggs, vanilla and baking soda. Sift together 2 cups flour, baking powder and salt. Stir into vanilla mixture. Spread half the dough into a greased and floured 9 x 13 inch baking pan. Spread lemon pie filling over dough. Spread the remainder of the dough on top of the pie filling. With a pastry blender, work the topping ingredients until mixture resembles crumbs. Sprinkle crumb topping over the dough layer. Bake at 350 degrees for 45 minutes or until topping is golden. Cool to room temperature or chill, if desired. |
I make a variety of breads up and bake them in small pans. I place them in the freezer and take them out, slice them and serve them with fresh fruit and butter or a cream cheese fruit spread. This goes great with morning coffee and is so quick and easy. I have date nut,chocolate, banana nut, zucchini/pineapple,apple, strawberry, pumpkin, and lemon in the freezer just waiting for unexpected guests. This works good for anytime! This is even great to have on hand for a quick covered dish or thank you gift for a hostess.

Your idea sounds great! What receipes do you use for the breads? I fix banana-nut mini loaves for Christmas gifts. Just wish I had a deep freeze! These make good gifts for sick people visitors helping them. mgrubbs (Marilyn)

This sounds "weird", but it's really good.
Make-Ahead Scrambled Eggs for a Crowd Eggs Add-ins: Red peppers, Onions, Ham, etc. 1 T 7up per every 2 eggs Just scramble it all together, put them in an oven-safe dish, and put them in the oven on "warm" until ready to serve. The 7Up keeps the eggs from getting hard; but more importantly, it keeps them staying yellow instead of turning green when making a lot. ALSO Sausage Egg Bake 2 Packages Regular Jimmy Dean Sausage (or spicy, if you like that) 2 Cups Grated Cheddar Cheese 1 Can Mushrooms 3 Cups Seasoned Croutons 6 Eggs, Beaten 2½ Cups Milk 1 Can Cream of Mushroom Soup 1. Butter a 9 x 13 glass dish and pour croutons in the bottom. 2. Brown sausage and place on top of croutons. 3. Mix milk, eggs and cheese. Pour over top. Mix ¼ cup milk with cream of mushroom soup and mushrooms and pour on top. 4. Refridgerate overnight before baking. 5. Bake at 350 degrees for 45 – 60 minutes. A GREAT make-ahead dish! |

BLUEBERRY FRENCH TOAST 12 slices day-old white bread, crusts removed 2 packages (8 ounces each) cream cheese 1 cup fresh or frozen blueberries 12 eggs, lightly beaten 2 cups 2% milk 1/3 cup maple syrup or honey SAUCE: 1 cup sugar 2 tablespoons cornstarch 1 cup water 1 cup fresh or frozen blueberries 1 tablespoon butter Cut bread into 1-in. cubes; place half in a greased 13-in. x 9-in. baking dish. Cut cream cheese into 1-in. cubes; place over bread. Top with blueberries and remaining bread cubes. In a large bowl, whisk the eggs, milk and syrup. Pour over bread mixture. Cover and refrigerate for 8 hours or overnight. Remove from the refrigerator 30 minutes before baking. Cover and bake at 350° for 30 minutes. Uncover; bake 25-30 minutes longer or until a knife inserted near the center comes out clean. In a small saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil over medium heat; cook and stir for 3 minutes or until thickened. Stir in blueberries; reduce heat. Simmer for 8-10 minutes or until berries have burst. Stir in butter until melted. Serve with French toast. Yield: 6-8 servings (1-3/4 cups sauce). |

i made this for one of our church breakfast's and it was FANTASTIC!! best is i had it done by 5pm the nite before and it sat in the oven. outstanding! good luck with whatever you decide to do!
6 slices bread, buttered side down 2c shredded cheddar cheese 1lb sausage, cooked and drained (i had a bit o bacon left over and threw that in as well) 1lb sliced fresh mushrooms 1can Ortega chopped green chilis 2c shredded jack cheese layer those in that order in the bottom of a 10x13 pan (i used a 9x13 glass one) in a bowl combine 2c milk 2 tsp salt 6 beaten eggs 1/2 tsp paprika 1/2 tsp basil 1/2 tsp pepper 1/2 tsp onion salt 1/2 tsp dried mustard pour evenly over the casserole, cover with foil, and refrigerate overnite. in the morning, remove the foil and bake at 350 for 50 minutes; let stand for 5 before serving. |
Honestly, if you want quick, easy and variety in the morning, get a package of single serve cereals and offer some muffins or bagels, fresh fruit and yoghurt as well. You really don't have to get up early to put something in the oven. As long as the coffee/tea is hot and plentiful, there should be no complaints.
And if there are, just direct them to the nearest Dennys!! |
I had to make the lemon coffee cake this morning, and I must report that my husband loves it. I suggested we give some to the neighbors since it was huge for just the two of us, and he said he didn't want to give any of it away! (What a little piggy he is sometimes! I think I'll cut it and individually wrap it for the freezer so we can get out what we want when we want.)
I need to comment that she has two listings of vanilla and none of the baking soda mentioned in the instructions, so I think the second is really meant to be baking soda. (the 1/2 tsp) That's the way I made it , and it turned out okay. |

We buy sausage and scramble it and store in the freezer. I will scramble hash browns and toss in some of the sausage, and crack a couple eggs and scramble till done, with seasonings of choice, maybe with dices onions or bell pepper too. Then I take a portion size and put in a heated tortilla and top with shredded cheese for an on the go breakfast or fast hot breakfast at home.
