This is my own recipe that I made for my husband. It has lots of ingredients, but really doesn't take long to put together, and it is really tasty! I saved all the broth from our Thanksgiving turkey and used that instead of canned broth last night. It is just delicious! And HEALTHY too.

3 dozen Italian meatballs, from the freezer section of the store
1 tsp minced garlic
1 small onion, chopped fine
3 TBSP oil
Brown Meatballs in oil with garlic and onion

In a large pot combine the following, and add meatballs when they are cooked:

1 lg carton beef broth
1 lg carton vegetable broth
8 cups water
4 lg carrots, thinly sliced
1 lg bell pepper, diced
1 lg can crushed tomatoes
1 can corn, drained
1 box spinach, thawed
1 bay leaf
1 TBSP sea salt
1 tsp black pepper
1 tsp dried parsley
1/2 tsp dried basil
1/4 cup chopped sun dried tomatoes (dry packed kind)
1 lg carton fresh sliced mushrooms

Bring this to a boil with the meatballs in it, then simmer with lid on for one hour. Cook noodles or macaroni in a separate pot and add to soup 1/2 hour before serving. I add about 4 cups cooked pasta.

Serve with Texas Toast or grilled cheese sandwiches.

MAKES A LOT!!!!

Sounds like dinner tonight for me....yum, I love love love soup. I have frozen meatballs in the freezer too.

I've allready made it and we just finished up two bowls each. With some nice crusty bread and laughing cow cheese. It was truly scrumpdidlyicious. Hubby really enjoyed it and he's not big on soup.
