Butterscotch pie recipe?
 
Does anybody have the old fashioned, from scratch, recipe for butterscotch pie? My mother made it using canned milk and I would love to have the recipe. When I was a kid (over 60 years ago) for his birthday Dad never wanted a cake... he always wanted a Butterscotch or a Chocolate Pie. Mom made the best and I would love to have the recipe again.

Thanks, UpNorth, I can hardly wait to try them! Both sound really close to Mom's recipe.
Think I will 'half' each recipe and try both today. I live alone and have half-size glass pie dishes- so I can make both and compare, without eating two big pies! Oh Yummy!

This recipe comes from my Mom's favorite cookbook, "The New 1932 Edition, Modern Priscilla Cook Book". The Butterscotch Pie was a family favorite and this page is well-splattered:
3 tbsp butter
6 tbsp flour
3/4 cup brown sugar
1/4 tsp salt
2 cups milk
2 eggs
1/2 tsp vanilla
1/4 cup sugar
Baked pastry shell
Cream the butter and flour together. Add brown sugar and salt. Pour milk on gradually and cook in a double boiler for fifteen minutes, stirring constantly until thickened. Add egg yolks well beaten. Cool slightly and add vanilla. Turn into baked pie shell, top with meringue made by beating the whites of the eggs until stiff and adding the sugar, and brown in a moderate oven. Time in baking, 20 minutes. Temperature, 325 degrees.

Thanks Jan, but that's a totally different pie. Its Caramel not Butterscotch and much, much sweeter. Its made with condensed milk, not evaporated milk. If you have never tasted real butterscotch pie you should try it. I can't wait to try out these recipes.

This isn't from scratch---but my grown kids prefer this ever Thanksgiving instead of pumpkin!

2 small boxes (4serving) REGULAR butterscotch pudding (NOT) instant
3 1/2 cups milk
2 Tablespoons butter or margarine
1/3 cup butterscotch chips
1 baked & cooled 9" pie crust----cooled.

Combine all ingredients but the pie shell in a pan. Cook over medium heat till it comes to a full bubbling boil. Remove from heat & cool 5 minutes---stirring twice. Pour into pie shell & refrigerate 3 hours. I also make this using chololate pudding & chocolate chips. Easy & delish!

I don't know if this will help, but it was my mother's recipe and a family favorite:

Carmel Pie

3 tbls. flour
1 cup packed brown sugar
3 tbls. butter
2 egg yolks
2 cups milk.

Mix sugar and flour. Add eggs yolks and milk. Cook all together until mixture thickens. Flavor with
vanilla.

If you have the recipe for a vanilla pudding, usually uses 2/3 cup white sugar, substitute 1 cup brown or dark brown for the butterscotch flavor. I'm not close to my kitchen or I would type the whole recipe. sorry.

Is your small pie plate something like this? Sounds like a good portion control idea.
