Cabbage Soup
Hello,
I'm in search of a tried and true Cabbage Soup recipe. Does anyone have any recipes you'd be willing to share or links to ones you've tried? Any help would be greatly appreciated! Thanks so much! |

Sauté chopped onion, celery and carrot in small amt of oil. Add pound ground turkey. When turkey is browned, add half head of small head of cabbage, chopped. Add large can crushed tomatoes, large can v8 juice, rinse out cans with water, add to pot. Season with salt, pepper, garlic powder( or chop up some garlic cloves) and a few bouillon cubes, depending on whether you use turkey or beef. Let simmer until cabbage is cooked. Tastes better the next day.

My Mom's recipe (with a couple of changes from me) Start with beef broth either commercial or homemade. Add 1 large can diced tomatoes, chopped onion, celery and garlic, and a bay leaf or two. Let simmer for a while. My mom would put in diced potatoes but I don't like that so I add a couple of handfuls of pot barley instead. After a while, throw in some chopped carrots and again let simmer a bit. Then put in your chopped cabbage. You can put in enough so that it looks like there won't be enough broth. It will cook down. Let simmer for about 10 minutes and then add one can Campbells tomato soup and a goodly amount of dill--either dried or fresh chopped. Taste and adjust seasonings. Oh and if you have any leftover roast beef, you can chop it up and throw it in with the carrots. Dorismae is right. It does taste better the next day.

I do not have a recipe for cabbage, but I do have a wonderful tip that I have tried the last two times I cooked cabbage. When cooking cabbage, lay a piece of bread over the cabbage. Just move the bread around when stirring the cabbage. It absorbs all the smell, and you cannot smell the cabbage in your house. It really works.

If you go on the internet and put in Jack Nicklaus Cabbage Soup diet, there is a very good recipe for cabbage soup. In fact my husband and I are going on the diet in a couple of weeks. It is an excellent weight loss diet. It helps you get jump started on a diet.

I have not had cabbage soup in a very long time, but this sounds so good, I just might have to make some!

I just made this soup and it was very good. Is not a "cabbage soup" but has cabbage in it.
½ cup olive or salad oil (I used less) 1 clove garlic, minced 2 cups chopped onion 1 cup chopped celery 4 tablespoons chopped parsley 1 can tomato paste 1 10 ½ oz. can beef broth, undiluted or 1 cup vegetable liquid 9 cups water 1 cup coarsely chopped cabbage (I used more) 2 carrots, thinly sliced 2 tsp salt ¼ tsp pepper 1/8 tsp sage 1 can kidney beans 1 zucchini squash, thinly sliced (optional) 1 cup frozen or canned green beans or peas 1 cup elbow macaroni Grated parmesan cheese Heat oil in large pot. Add garlic, onion, celery, carrot, cabbage and parsley; cook until soft. Stir in tomato paste, broth, water, salt, pepper and sage. Mix well, bring to boil. Lower heat, cover and simmer slowly for 1 hour. Add remaining ingredients except cheese. Cook 10 to 15 minutes more or until macaroni is tender. Serve piping hot with plenty of cheese. Makes 8 generous servings. |
