This salad was a real hit at our luncheon. I promise you will love it!

Carmel Apple Salad
3 apples chopped (any kind, mix and match) fuji works great
1 cup honey roasted peanuts
1 cup mini marshmellows
1 small tub of Cool Whip
1 8 oz can of crushed pineapple with juice
1 small box of instant butterscotch pudding

Mix all together and let sit for about 1/2 hour before serving

Yes, mix it in dry. Don't pre-make the pudding. Sounds a little different but just wait until you taste it. So good. It's what makes the carmel flavor. When we were putting it all together for the luncheon I told my friend who had the recipe that I would add a drizzle of caramel ice cream topping to it just before serving. You've just got to try it.

Ok, so let's make it healthy -- Fat-free or low-fat Cool Whip,
sugar free-fat free butterscotch pudding, crushed pineapple in light syrup or water will certainly help and should not change the wonderful taste in any way. How's that for temptation!

Question, is it still good without peanuts, my DD is allergic to peanuts ... and it needs to chill for the 30 min ? :)

No reason you couldn't leave out the nuts. They add crunch. Don't think leaving them out would spoil the recipe.

Looks like a great recipe. I'm allergic to dairy so this looks like something I can have. You waved your magic wand and took all the calories out of it - right???

Oh this sounds sooo good. I make the watergate salad, that has pistachio pudding, pineapple, marshmalows and coolwhip in it. Brother-in-law can't have nuts. I'm going to try this one without the nuts. (maybe put it in 2 bowls, one with nuts and one without). I also want to take it to my Church women's circle lunch. They will love it!

If he can't have nuts, maybe you could achieve the "crunch factor" with some cereal, maybe apple cinnamon cheerios??

Sent the boys (my hubby & his brother) to town to get butterscotch pudding, as I had 2 boxes of instant vanilla, and guess what!!! They came home with 2 more boxes of vanilla. :( Guess there will be tomorrow. I know it will be good, if I just get that butterscotch pudding :)
