Carmel popcorn - anyone have a good recipe?
thought this would be a good snack on Wednesday evening for both little and big people. Know this is the place to get a great recipe. Hope everyone has a blessed Thanksgiving.

I use King Arthur Flour's recipe, which can be found at http://www.kingarthurflour.com/recip...el-corn-recipe except I omit the lemon juice. I love the light shell it makes on the popcorn, just set your oven very low to bake or the caramel will burn a bit. I make a double batch in my roasting pan and eat on it all winter! Enjoy!
ETA: I sub honey for the molasses it calls for because I like the lighter flavored caramel. |
sounds exactly what I want. Thanks.

My late husband loved this and he fixed it all the time!
1 Cup uncooked popcorn popped In Bowl Mix: 1 1/2 Cup brown sugar 1 1/2 sticks butter 1/3 Cup Light Karo Syrup 1/2 teaspoon salt Micro-wave on high 2 1/2 minutes, stir well, Cook 2 1/2 minutes more, add 1/2 teaspoon baking soda, stir well. Put popped corn in a large brown bag. Pour cooked mixture over.Shake well, close bag, put in micro-wave cook 1 1/2 minutes on high, remove and shake. Cook on high 1 1/2 minutes more, shake again, Cook on high 45 seconds, shake again, cook 30 seconds more. Tear open bag and spread. Be careful, its hot! This is the best carmel corn I ever ate!!!! |
It is also good with chocolate drizzled on top when it has cooled. When given as gifts they always say it tastes like Kracker Jacks. I had found out that you can use any recipe for the caramel version but just cook it to 300° and no baking is required.
No bake caramel corn * 8 cups popped corn * 1 cup brown sugar * 1/2 cup butter * 1/4 cup light corn/pancake syrup(I use Log Cabin) 1 tsp molasses * 1/4 teaspoon salt * 1 teaspoon vanilla extract * 1/2 teaspoon baking soda Can add peanuts if desired Pop corn and sort out any leftover kernels, place in very large roaster pan. On stove mix sugar, butter, syrup and molasses, stir/cook until sugar dissolves and cook to 300° Add vanilla and baking soda, stir very well (add nuts now if desired) Pour over popcorn and stir to coat as much corn as possible. Put out on cookie sheets (2) to cool Break into chunks and store in zip bags or airtight container. Enjoy but keep the container closed because it seems to disappear when you are not looking.*Ü* |

Thanks for the reminder!! I used to make this!! It is delicious!! I lined up grocery bags on my kitchen floor and we popped corn like crazy!!
|
Making this in the microwave sounds so easy but is there danger of the paper bag catching fire? I was going to pop corn in a small brown bag but then I read somewhere not to do it. Opinions, please!
|
I have done this Dozens of times over the years and never had a bag catch fire.
|
I use an empty flour paper bag to pop my corn , have for about two years when I decided to try to eliminate as many chemicals as possible from my diet . I have never had a problem using this heaver bag, and I fix popcorn at least once a week . Last year I made caramel corn and popped several batches one right after another and never had a problem . I hope no one has an issue with fire, I am just saying I never have .
I did not put the caramel corn in the microwave though, I just popped the corn for it in the microwave . |
Thanks for all these recipes, I especially like any microwave recipes, baking my caramel popcorn usually took about 3 hours ! Another choice for popping the popcorn: go to Walmart and buy their huge bags of popped corn. Sure cuts down the time fixing all that popcorn.

When popping corn in a brown bag, do you add oil to it like when doing it in a popper or just dry? I'd like to do this--like raeder63 said--get rid of the chemicals!

Not sure, never used micro-wave corn, I just know 1 Cup makes a lot of pop corn.
Now that I have given you the warning, I will give you the greatest popcorn recipe I have ever found. Buy a box of Rice Crispies, follow the directions for rice crispy treats, except use popcorn instead of Rice Crispies. Makes fast and easy popcorn balls, and won't pull your fillings out. Grandma made these every Christmas tinted green and red. Still my favorite Christmas treat, even with dentures! (BTW- remove all of the 'old maid' kernels before you put the marshmallow on the popcorn.) |
This is not a caramel popcorn but definitely is good…..and it's called the Quilters' popcorn. I am not sure but I could possibly have gotten the recipe right here on the QB…...
Quilters popcorn 8 cups of popped popcorn 5 cups Kix cereal 3 cups crushed Fritos 1 lb. white chocolate Mix the first three ingredients together Melt chocolate and pour over the popcorn mixture Spread on waxed paper to dry, then crumble and store in airtight containers. |

trivia42 - I didn't see molasses in the recipe - what am I missing. Definitely using this recipe. Thanks

I ate something quite similar tonight at quilt guild. It was wonderful, so I asked for the recipe. Caramel-Marshmallow Popcorn: Place 1/2 cup butter & 1/2 cup brown sugar in microwave for 2 minutes. Stir well & add 10 large marshmallows. Microwave for 1 1/2 minutes. Stir and microwave another 1/2 minute. Stir and pour over 12 cups of popped corn & enjoy. Warning: It was addictive!

I use a paper bag to pop popcorn in the micro all the time and have never had one catch fire. , Good way to cut down on the fat
by popping it dry. |
I made the caramel corn with the King Arthur recipe and everyone enjoyed it also did the one with marshmallows and it was good. Keeping both recipes. Thanks for you help.

Wow! I now have several more caramel corn/popcorn recipes to try out. I did pop two bags of microwave popcorn, mixed and cooked the brown sugar/syrup mixtur, poured it over the popcorn, than baked it in the oven for about 10 minutes. The caramel stayed on the corn and husband really liked it. He has requested more.
