Cauliflower Fritters

1 large head cauliflower

1/2 flour

1 egg

Steam cauliflower, place in bowl and mash and let cool 10 min.
Stir in flour and egg, season with salt and pepper and refrigerate for 15 min.
Roll mixture into ball then flatten into patties. Heat 2 tablespoons olive oil over
medium heat. Fry patties until golden brown about 4 min. on each side.

YUM!!!! i love cauliflower. i'll be sure to make this as soon as i grow mine. i really don't think we are going to have spring weather here, let alone summer, but here's to hoping.

sounds good. we love it deep fried and we also mash it with a little cheese and that is good too.

Thanks - sounds good. I am trying to eat healthy and lose some weight so think I'll try whole wheat flower and egg beaters and that should work for me.

The way I fry eggplant is to peel it (optional), slice it and season it, dredge in flour, dip in beaten egg, then in dry bread crumbs, then fry in a skillet. It's done when easily pierced with a fork and the bread crumbs are crisp and golden.

OOPS! Guess I was way wrong. I googled eggplant fritters and bunches of references came up. Some were plain llike the above cauliflower recipe, and some had added ingredients like onion, garlic, seasonings, even cubes of mozzarella inside of the eggplant "ball". Check it out - you might find something you really love!

There's lots of recipes for broccoli fritters on google, and probably on lots of the cooking sites, too.
