Cauliflower Salad
 
1 Head Cauliflower cleaned & cut florets into bit size pieces (throw out steams),1/2 Head Lettuce cut into small pieces , 1 pound bacon fried & crumbled ( I purchase real bacon bits in a jar ),3 hard boiled eggs mashed,1 small onion diced into small pieces , 1-8oz. package of shredded cheddar cheese , Miracle Whip (about 1 or so cups. Will look like it is kind of pasty) Mix all ingredients together & let sit over night . Next day stir well and taste add more miracle whip if needed . When it sets over night the lettuce releases moisture into the salad & that is why you only add more Mayo if needed . Store in covered dish . This is what I take to my families dinners ( by request ).You can put the full head of lettuce in the salad if you want .This makes a LARGE bowl.

BTW...the stems are OK to eat...tastes like kohlrabi.

It is salad dressing, similar to mayonnaise but with a little kick.

Are you chopping the lettuce into bite size pieces? I don't use head lettuce, only leaf lettuce, that should work too. I think I will try this.

Re: cauliflower...you say only use tops...not the stems? Why not chop them up for crunch?

We do this one all the time at our house. You can toss anything you like in the salad part. I usually do lettuce, cauliflower, broccoli, sugar snap peas, carrots, onions, bacon, and Parmesan cheese. I also add a bit of sweetener to the mayo.

I don't use the stems because I think it gives it a kind of bitter taste

Yes, this recipe is delicious. Have made it now for several years and everyone just loves it. Nice and crunchy.

Just a quick tip, when I purchase bacon, I'll get an extra package and fry it up for when I need bacon bits. Can also throw into an oven @350 for about 30 minutes til done. Drain fat from it on paper towel then put in freezer bags by portion size. I use bacon in meat loaf and great for breakfast tacos. Great for reheating for quick breakfast and blt. Sorry didn't mean to hijack your post. Just thought you might like the bacon tip. I have made your salad and it's great.

Sounds like one I have done before and it is very good. Instead of adding sugar to sweeten, I like to add some Dijon or Honey Mustard for a little kick. Have also added cucumber chunks before serving.

That sounds so good. This is similar to how I make my potato salad but the cauliflower is a much healthier option!

I make one very similar to yours. Instead of lettuce add broccoli florets and a couple of pinches of dried dill. Great healthy salad that keeps 2-3 days.

This should have came with a warning not to taste it right after you make it*Ü* The dish came out of the fridge TWICE just to make sure it was still good! Thank you for the simple but GREAT dish, am taking it to a family picnic tomorrow and will be very careful not to taste too much before I leave.
Am keeping this one for church pot luck dinners.
