Chop up 9 cups celery
3 parsnips some onion a slice of ginger 1-3 cloves of garlic Simmer in 6cups chicken broth or veg broth Cook until everything is mushy. Cool. Puree & strain. A nice change from tomato-based soup. |
sounds good - I LOVE parsnips!! I bet it would be good cold too, as a warm weather soup.
