I have doubled and tripled this recipe when the whole gang was here and they still can't get their fill of it.

Cheddar Chowder

2 cups water
2 cups diced potatoes
1/2 cup diced celery
1/2 cup chopped cauliflower
1/4 cup chopped onion
1 tsp salt
1/4 tsp pepper

Combine these ingredients in saucepan and boil for 10-12 minutes. DO NOT DRAIN when finished cooking this.

White Sauce:

1/4 cup butter/margarine
1/4 cup flour
2 cups milk
2 cups grated cheddar cheese
1 cup cubed ham

Melt butter in saucepan, add flour and stir until smooth, (about 1 minute) Slowly add milk; cook until thickened. Add grated cheese to white sauce, stirring until cheese is melted. Add white sauce to vegetables that have not been drained, stir to blend, add ham. Heat through.

Single recipe makes 6 servings.


***I make mine and put it in my slow cooker on low, everyone helps themselves whenever they are hungry..which is ALL the time around here! LOL This thickens more over the time it's in the slow cooker and the next day it's even better. :)

Yum! That sounds like a winter-warming soup! Great idea for my leftover ham! And it's supposed to go down to 50 degrees tonight. LOL!

Ok, change of plans, beans on to soak, go get butter and cheese tomorrow. Cheese soup for lunch, bean soup for dinner! Thanks for posting this Shadow Dancer :D :D :D Now I will have to make homemade dinner rolls, too :shock:

Shadow Dancer, I made this last night and it was awesome! I took 1/2 to some friends and before I made it back home they had called because they wanted the recipe :D :lol:

That sounds delicious! I'll have to try making some this week...and if its more delicious than I thought I'll probably end up making it for Nick when he comes up from Rochester next week. :mrgreen:

I made it for lunch today and we loved it.
Jay (my husband) wanted to know who gave me that recipe, i told him a very good cook and quilting friend.


I'ts freezing rain here today, so it was a good chowder, with hot rolls, to warm him up after work this morning.

Hope you don't mind if I give your recipe out.
