Cheese Log
 
This is yummy for those who like a little heat.

CHEESE LOG
8 OZ CREAM CHEESE
1 TABLESOPOON RANCH DRESSING MIX
2 CUPS GRATED CHEDDAR CHEESE
1 OR 2 TABLESPOONS CHOPPED JALAPENO(I USE TRAPPEY'S BRAND SLICED JALAPENOS)
LOWERY'S SEASON SALT (TO TASTE..USUALLY 1 TEASPOON)
JALAPENO JUICE TO TASTE

JUST MIX, COOL, ROLL IN INDIVIDUAL LOGS(IF FOR GIFT TRAYS). ROLL IN YOUR CHOICE OF TOPPINGS. (CRUSHED SPICY CRACKERS, CROUTONS, BACON BITS, NUTS, OR RED PEPPER FLAKES. SOME THAT LIKE A REAL BITE ROLL IN CAYENNE MIXED WITH SOME OF THOSE.)

My husband likes it HOT. he usually avoids cheeseballs but this may change his mind.

Ladydukes has it right! I just finished canning my Mother's recipe for Salsa and need to get busy with my 'Bread &Butter Jalapeno' canning. All my family and friends expect a little "heat" from me at Christmas. Forgot...just baked mini loaves of jalapeno cornbread.

Have you ever tried the cornbread salad that uses jalapeno cornbread? It is quick and simple.
I bake together 1 pkg each of yellow sweet cornbread and jalapeno cornbread mix. 1 lb of well cooked bacon, 1-2 chopped tomatoes, 1 chopped green bell pepper, 1 bunch of chopped green onions be sure to use some of the green tops, about 1/2 cup of Mayo. When cornbread is cool crumble it in a large bowl, crumble bacon into very small pieces add to cornbread then add chopped veggies stir well, then stir in mayo and mix well. You may serve it then or later-be sure to refrigerate (because of mayo if not using immediately) or any left overs. This is great any time, but really goes well with Thanksgiving and Christmas meals.
My daughter can make a meal of just this - we like to top it with La. Hot sauce when we eat it-but I don't add hot sauce to whole salad just our individual servings.

Do you share your salsa recipe or is it a secret family recipe? If you share it I would love to have a copy. Gerbie

Gerbie, it is an old family recipe, but I'm not much for secrets when good food is concerned!

Terry Hot Sauce (My maiden name)
1 gallon tomatoes
2 c. vinegar
1/2 c. sugar
1 1/2 T. salt
2 T. garlic salt
5 large onions
5 large bell peppers
1 c. jalapeno peppers (minced)(give or take a few, depending on your heat tolerance)
You can either use and old fashioned grinder or a food processor to chop all ingredients.
Cook until fairly thick(don't ask how long!) Then can as you prefer. I boil jars, lid flats, put hot sauce in while still very hot. I have never had issues with the lids not sealing.
