Hi everyone

I would like to try to do cheese by myself...anyone ever tried?
Specifically my goal is to do mozzarella cheese soon or later...but I think I will start from soft cheese like ricotta before.

I would like to know your experiences regarding cheese making.

Google how to make cheese and see what you get. You should be able to make cottage cheese, mozzarella, etc. I'm pretty sure you cold buy a book from Amazon on making cheeses.

I had a cheese making kit when my kids were little and we had fun trying different kinds. Cheddar I never got to but the rest we did. It isn't hard.

No, I never thought of trying it. None of my ancestors who were farmers ever tried it. It is a long process from what I understand. Do you own any goats??

Yeah ! I tried...the first step at least!
I made something similar to Ricotta Cheese.
I found a couple of tutorial and without the rennet it looks it is the only thing I can produce. I think for you is called cottage cheese...we called it "primo-sale" in Italy. It is easier than I thought!!!

Now it is cooling down in the refrigerator.

Basically you warm up the milk than when it is warm you put some lemon juice and let it rest. After 10-15 min you can filter the cheese from its water...press a little bit...I will tell you about the taste.


No, I don't have any animals (milk animals...my cat doesn't count for this) I simply bought the milk at the supermarket. But if it comes out good and I found the rennet I will look for a farmer that can sell me the milk directly .

...I hope I can do mozzarella ...I miss mozzarella so much!!

If you find a good Mozzarella Tutorial please let me know!! My family is from Calabria and my husband family (from his mother side) is from Sicily ....Trapani, Birgi Novo!

Will do! I looked up the uses for the leftover whey. It can be used in place of water in making breads, fermenting cabbage, smoothies, pour it over the dogs dry kibble and even water tomato planets (USE sweet whey NOT the acidic whey seems they benefit from the added calcium).

Wow! Amazing...thanks to those advises you don't waste anything!! I am pretty happy about this new "cheese-thing"...it is the first time in a while that I could involve my husband in one of my hobbies...he is not working at the moment and he start to be...annoying...so if he find something to do...it's a win-win!

I've made my own cream cheese before. It's not hard just takes a lot of room and time.

Gerrycnx, I believe that mozzarella is the easiest because it is the one 4-H members start out with. I've been in a group several times when it was made and it was fast, even when it was flavored with herbs. Each participant was given a rennet tablet at the end of class. I love cheese, just not fond of that particular one. I was going to suggest you contact your County Agent, then saw where you live. I googled and found many tutorials in text and on video with "4-H making mozzarella cheese" . I would not attempt any aged cheese.

When and where I grew up, not everyone had refrigeration. There was always a jug of milk clabbering on the back of the kitchen counter. I was never a big fan of buttermilk, but loved Mama's homemade cottage cheese. When we lived in Maryland, I had access to raw milk and sometimes made cottage cheese, never have liked the sharp, acidic taste of the store bought stuff.

I must say I never even thought of " making cheese". Both sets of my grandparents are from Poland and my husbands mom and dad were from Sicily...very rural...and none ever made their own cheese...yes to breads, pasta, sausage, pizza, canning...and I have dabbled in all of that. I love most cheeses, but I really think if I "made" it, I may lose my taste for it. I get rid of milk even before the due date...don't like the smell of milk in a plastic bottle...buy only dairy fresh glass bottled....but for those who are doing or will try...have fun.

I used to make the method using just goat's milk and vinegar. My son wouldn't drink the goat's milk unless I put some flavor in it so I would make this and add crushed pineapple to the mixture and he ate it quickly.

I miss having my goat's. They truly make great pets, inexpensive to keep and great fun to watch and provide a healthier milk then chows, IMHO.

My children had a pet goat when they were youngsters. She would wander through the house, in the backdoor and out the front with no accidents! I did catch her eating my Thanksgiving Day centerpiece I was working. She ate the miniature pumpkins and the dried corn...lol
She didn't like the dogs on the porch, so she head butted them off of it. When she wasn't looking they got back up on the porch and went to sleep.
