Chicken Crumble
I would like to share this recipe with you as it is so easy. I like to prepare it in the morning so it’s ready to cook for our evening meal. This recipe will serve 2 - 3 people.
Chicken Crumble For the crumble - 2oz flour (any) 2oz fresh breadcrumbs 2oz butter 2oz grated cheese For the chicken- 2 cooked chicken breasts or similar amount of cooked chicken meat 1 tin condensed soup (celery, chicken or mushroom) 1 Rub the butter into the flour and breadcrumbs then add the cheese. 2 Chop the chicken into bite size pieces, put in a bowl and stir in condensed soup. (Do not add any extra liquid) 3 Put the chicken mix in a deep pie dish or similar then put the Crumble on top. 4 Bake in a moderate oven 185c, 360f, gas mark 5-6 (UK) for about 30 mins. I like to serve with green vegetables and roast potatoes. Options - Cooked turkey could be used instead of chicken or a combination of chicken/turkey and cooked ham. I like to add half a finely chopped leek to the chicken mixture. Some tinned sweet corn is nice too. A little chopped fresh herbs adds interest to the Crumble. I like to cook mine in a Pyrex (glass) dish so that I can see the soup bubbling. It is important that the chicken is heated through thoroughly. |

I have cooked this often - only difference is that I have used a smashed up packet of ready salted crisps, chips I guess for across the pond (large pack) instead of the crumble mix. It was delicious (when I used to eat meat), and quick to prepare on a school evening following work.
