RECIPE: CHINESE SALAD
************************************************** *********

INGREDIENTS:
1 head cabbage
1/2 bunch green onions, chopped
2 packages Ramen Noodles; uncooked and broken into pieces
(discard seasonings)
2 tablespoons sunflower seeds
1 cup sliced almonds
1/4 cup margarine
1/2 cup sugar
3/4 cup oil
1/4 cup red wine vinegar
1 tablespoon soy sauce

DIRECTIONS:
Chop cabbage in medium pieces, add chopped green onions. Brown noodles, sunflower seeds, almonds in margarine (set aside to cool). Boil sugar, oil, vinegar, and soy sauce, cool completely. Toss everything together just before
serving.

NOTE: I like to wash & dry the cabbage, & make the dressing, and refrigerate. Then make the noodle mixture and set aside. If you are serving enough people to use this whole recipe, then mix all just before you serve. When there are a small # of people, just mix enough for each, because this does not keep well after it sets for any length of time, once it is dressed, and definitely doesn't keep well overnight. If all components are kept separately in the frig, they stay nice and fresh for future salads.

Some recipes call for using the seasoning packet in the dressing, but I tried it once, and didn't like it. Besides, it is loaded with sodium, and you get that in the soy sauce, so why double up.

Glad you enjoyed the salad sew_lulu. There are some in my family who find it addictive! When I have leftover, grilled chicken, I cut it up and add to the salad, and it is pretty tasty.

I like to make this with Bok Choy. It is better made well ahead of time and will keep for several days- if there is any left over.

I make my similar salad with 1/2 Napa cabbage and 1/2 regular cabbage, shredded. Mixes up the amount of crunch in the greens.

I love this with chicken strips on it as a filling lunch!
