Chocolate Blueberry Brownies
 
Yesterday, I made up some chocolate brownies that had blueberries in them. They tasted good and they were super moist! My recipe did not have any eggs in it, but used flax seed as an egg replacement. It called for pureed prunes, which I didn't have. But, I had seen another recipe in one of my cookbooks that called for blueberries, so I swapped some pureed berries for the prunes. I think that any recipe would actually work with the blueberries. They could be added whole, or blended up and used to replace some of the oil. Now I'm thinking of other berries that might work as well...raspberries would be heavenly.

Sounds good to me too! I've been onWeight Watchers and have blended in all kind of crazy combinations in baked goods as healthy alternatives. Applesauce for oil, Greek yogurt for milk, extra fruit in muffins. Love the Kodiak muffin mixes, they don't brown as easily because they don't contain alot of sugar but are o' so good. Thanks for the idea, I may give it a try with their brownie mix.
