Cookies with Cake Mix
 
So the other day my mother made these wonderful cookies I had never tasted them before. When I asked her how she made them she said I made them from a cake mix. So I had to share this recipe she said you can make them how ever you want to.

My sister used cake mixes at Christmas. She got a bargain on cake mixes and found the formula to make them as cookies. Everyone loved them. What an easy way to make a quick batch of cookies.

My favorite cake mix for these cookies is the pecan flavor...though I do love lemon cookies too. I use butter for the shortening. I get raves when I make them...never tried the white mix...hmmmm.

..and your cookie from cake mix recipe is about the same? Great way to keep that cookie jar full!

Better still use a chocolate cake mix
2 eggs
1/2 cup butter
1/4 to 1/2 cup milk to make a soft cookie dough (stiff cake batter)
add in as many chocolate chips and/or chopped walnuts (or pecans) as you wish

Drop by spoonfuls and bake at 325°F for 8-10 minutes (dependent on the size of your cookie).
Be careful to not over bake, so they can be a nice soft cookie.

Also try lemon cake mix with poppy seeds, orange cake mix with cranberries, white cake mix with cinnamon sprinkled with sugar, before baking(think snicker doodles), cherry cake mix with chocolate chips, etc......

I had a quilting get together/lunch last week and one of my friends brought cake mix cookies. She wrapped the dough around 1/2 of a miniature snickers bar and they were yummy. The only kind I have made so far was using a butter pecan cake mix.

This post brought back some fond memories. My MIL did all the cooking and baking. After she died my FIL learned to make these cookies. He was so proud of himself.

(After she died he found a cooking class for men only, sponsored by a nearby church. He went and learned the basics of cooking. I always thought that was a great outreach program for that church. I guess it's not so true today, but in his lifetime there was a clear division of household chores between the men and women. He could heat up a meal in the microwave, but that was about it! )
