Cooking Tips & Hints

Please post 2 of your favorite cooking tips & hints!

1. What makes the cookies on the edges of a cookie sheet brown more than those in the center? They are nearer the walls of the oven and get more of the reflected heat. When baking cookies on a sheet, do not place them near the edges, do not crowd them, and place the cookie sheet in the center of the oven.

2. If you flour fruits, nuts, and other things before adding to cake, muffins or pudding, it will keep them from falling to the bottom.

1. Do not lick the beaters until the mixer is turned off
2. When measuring honey or molasses, measure the liquid or oil in the cup first, and it will come out easier.

I'm a school cook and do a lot of cooking and baking. I can't think of very many tips right now but if I can answer a question don't be afraid to ask. One thing I always do is if I'm making anything with mayonaise, I always add a little bit of sugar, to slaw or macaroni salad etc.

1. Basil - store freshly cut basil on your kitchen counter in a glass with the water level covering only the stems, occasionally changing the water, the basil will develop roots and keep for weeks

2.Place pieces of white bread in refrigerator to absorb odors.
