Corn Pudding/Souffle Recipes Please
 
I want to make a fluffy, creamy corn pudding with fresh corn and maybe some added ingredients s/a cheese, peppers, etc. Does anyone have a good recipe? Thanks.

The food show on PBS just had one last Saturday....Mike's ????? He used to be on the American Test Kitchen Show before they all split and had their own shows on PBS on Saturdays. Sorry I can't be more help.

I start out with the basic Jiffy box corn casserole recipe found all over the internet, like here:

You can certainly substitute in fresh corn for canned!

I also make my own "Jiffy" mix from one of Alton Brown's recipes because my son is vegan and Jiffy uses lard (there is a vegan version but not where I shop).

I add a small can of the diced chilis and a cup or so of grated cheese, then sprinkle cheese and sliced green onion tops during last 10 minutes or so of baking so people know it's savory.

This is our favorite, though I have never made it with fresh corn. No one suspects the second ingredient.

Lynn's Corn Casserole ( no idea who Lynn is)

2 cans corn - 12 oz
1 large or 2 small packages of Mahatma yellow rice cooked to package directions
1/4 c chopped bell pepper
1/4 c chopped onion
2 cans cream of celery soup, or whatever cream of soup you have on hand
1 cup grated cheese
1 stick butter

Melt butter and place in casserole dish. Mix rice with butter. Mix all other ingredients, top with cheese. Bake 350 for 15-20 minutes.

This is the one my family insists on for holiday meals......we love it. Never made it with fresh corn but think it would be awesome.
We have been using it since 2006! So tried and true.

The one Iceblossom linked is the one me, my entire family and most of our friends use. Everyone loves it. When our fire company has (or had) pot luck dinners I need to make 4 of them to feed everyone.

Was thinking about this and was going to mention that I wouldn't bother actually creaming any of the corn, but I probably would probably cook all of it, maybe taking an ear or two out a little early to keep a good crunch factor. You might have to add a tablespoon or so of milk or other liquid.

Should mention that when I make it for the son it is vegan and no cheese! It's just that I make the mix and that is what I have in my pantry instead of the Jiffy boxes.

Some people expect the sweeter version without the diced chilies, if I do that I do a drizzle of honey to mark it as sweet.

It's funny regional variations, here in the Seattle area growing up and working it wasn't a common thing, but it always goes over well at potlucks and family gatherings and is now "my" dish to bring to such things.

Thanks everyone. They all look good! My SIL's birthday is coming up on Tuesday and I'm planning on making him a New Orleans style dinner. I think that a corn pudding would make for a nice, Southern, side dish.

I made the, "JUffy Corn Bread" corn pudding last night. Huge hit! I usually don't buy mixes, but Jiffy was on sale, so I gave it a try. The corn pudding was delicious! I added some grated, colby cheese on top which was an added plus. Thanks everyone!

Thanks y'all. I had lost my Lynn's Corn Casserole recipe, looked high and low for it. Then I remembered I had shared it here. Yeah! It's still here and I can bake it again.
