Cornbread Salad
 
Cornbread Salad

Note: This can be servedeither way, as a meal with no side dishes, or you may use it as a side dish.This is not an original recipe, but I seriously love it and wanted to share itwith the group.

1 box Jiffy mix
4 firm tomatoes, chopped
1 bell pepper, chopped
1 large Vidalia or white onion, chopped
1 Cup sweet relish
½ Cup sweet relish juice
1 Cup mayonnaise
9 slices bacon, cooked crisp and crumbled

Cook cornbread according to directions. Crumble cooked cornbread into a largebowl.
In another bowl mix vegetables and relish.
In a different bowl mix mayonnaise and juice.
Layer in flat bottomed bowl: ½ cornbread, layer of bacon, ½ vegetables w/relish, ½ mayonnaise mixture.
Repeat
Refrigerate overnight.

Doesn't the cornbread turn to mush?

That was my question. I like textures and not mushy :-)

I have never made this but I have eaten it and amazingly it was not mushy. I thought it was good.

I like it sorta taste like cornbread dressing to me ,there lots of recipes for t.

Moistness can be controlled by the amount of mayo used. Try starting out with 1/4 cup, see how you like it and go from there. The flavor improves the longer it sets, as does the wetness. I make it just under how moist I want it to be.

Nice. i made cornbread with frozen chopped broccoli once. It was great.
