Cottage Cheese
I can not consume straight cottage cheese. The texture is too off-putting. I do, however, substitute ricotta cheese with small curd cottage cheese when making Spinach Lasagna.
I have seen low-carb recipes on FB, but not all the recipes there are good. I am asking for your recipes for cooking/substituting with cottage cheese. Any takers? |
This one is good. You can always blend the cottage cheese smoother before using.
Unlike you, I love cottage cheese and find it a good option for a quick protein snack. It's especially good with liquid honey mixed into it but that bumps it out of the healthy foods column. I've been experimenting with using it as an ice cream base. Crustless Spinach-Tomato Quiche 1 10 oz pkg frozen chopped spinach, thawed and drained 1 large tomato, sliced 1 1/2 cups cottage cheese 1 cup grated sharp cheddar cheese 3 large eggs 2 Tbsps canola oil 1 tsp garlic salt 1/8 tsp ground pepper Press all the water out of the thawed spinach. Combine cottage cheese, cheddar cheese, spinach, eggs, oil, salt and pepper. Pour half of the mixture into a lightly greased 9 inch pie plate. Arrange tomato slices over spinach and cover with the remaining spinach mixture. Bake in a preheated 350° oven for 40 minutes or until a knife inserted in the center comes out clean. Serves 5 |
I tried this whipped cottage cheese dessert the other day. It's not bad!
Ingredients 2 cups cottage cheese !/3 cup sugar or sugar substitute equivalent 1 teaspoon vanilla 4 graham cracker sheets crushed (I used granola) 2 cups fresh berries Instructions Add cottage cheese, sugar or substitute and vanilla to food processor and blend until smooth. Scoop 1 heaping tablespoon of graham crackers into each of 6 small glasses. Divide the whipped cottage cheese mixture evenly in the glasses. Top with berries. Refrigerate at least 4 hours to set up. Serve with a dollop of whipped topping if desired. |
I love cottage cheese with tomatoes and chives as a “salad”. B.zang your quiche sounds delicious!

I too, cannot tolerate the 'feel' of cottage cheese (to be honest, it gives me throw up vibes). I will only eat it in a cooked dish like lasagne. But I have also used a similar filling in stuffed peppers and it was really good. I suppose one could actually go meatless by using onion, celery, garlic, cauli rice, cottage chesse and a tomato sauce. I might have to try that.

My two girls ate whole milk cottage cheese by the gallon. It was the dip to have with potato chips for them and their girlfriends. We like cottage cheese and eggs whipped in the blender to make omelettes.

Goulash calls for a side of cottage cheese in my world. Our son was a fussy eater, but he’d eat cottage cheese and that surprised me.

When I was married in 1970 this salad was servred at one of my bridal showers. I also hate cottage cheese because of the texture, but I have eaten and served this salad for over 50 yrs.and still like it. It remains the only cottage cheese salad I will eat.
Dry Jell-o Salad 22 oz carton small curd creamed cottage cheese Carton cool whip Can of crushed pineapple drained well **optional can drained mandarin oranges 2 packages dry jello---can be regular or sugar free. (I like 1 box orange mixed with 1 box of orange pineapple if you can still find it in stores, otherwise 2 boxes of either orange or cherry are also good). Stir all ingredients together and sprinkle dry jello over top and mix in well. Place in bowl, or even a cake pan and cut squares. Refrigerate a few hours for jello to dissolve and flavors to blend. Keeps well in the refrigerator for several days. This salad is very forgiving and the amounts of fruit, coolwhip and cottage cheese do not have to be exact. It can also be halved to make with just one box of jello. Hope you enjoy or it brings back memories of days passed. |

it doesn't take much cottage cheese or the eggs will be too soft.
