Crock Pot Pumpkin Pie Pudding
 
Taken from the Country Register newspaper and so yummy!

Spray a 3 quart crock pot with oil.
Mix together:
1 can pumpkin
1/2 cup Bisquick baking mix or similar
3/4 cup sugar
2 tsp pumpkin pie spice
12 ounce can evaporated milk
2 eggs, beaten (or 6 egg whites)
1 tsp lemon zest
Mix everything together in the crock pot and cook on low for 3 hours. Enjoy!

I have made this quite a few times. The recipe was in my Fix it and Forget it cookbook. Very yummy!

Hi, I just found the recipe in the cookbook "Fix-it and Forget-It." The lady calls for a 15-ounce can of solid pack pumpkin. I'm going to try this one today, what with ice and sleet headed this way.

Sounds good. I love pumpkin. Do you think it will work in a Dutch oven? I don't have a crock pot.

Bisquick is a baking powder biscuit mix. It includes flour shortening, baking powder and salt. If it is unavailable where you live I would be happy to give you recipe to make your own. It can be used in many ways to speed up your cooking.

It is YUMMY!! I made this recipe this afternoon and hubby loved it! (Pumpkin Pie is his favorite) I found another recipe for it on a website nearly identical but said to cook for 5 - 6 hours on low!! Don't Do This!! I cooked mine longer than 3 hrs and the crust was a bit 'done' shall we say! giggle Still it didn't spoil the taste! Thanks for posting this recipe!!

Just put some in my small crockpot. I used the 'Fix it and Forget it' recipe. The one difference I did notice, the cookbook calls for 2 TBSP of pumpkin spice......we will see how it turns out ;)

This recipe makes a large amount. I store some of it in the freezer to keep it fresh until I need to refill my canister. I use this to make Biscuits, Pancakes, Muffins, Waffles, Gingerbread, Cookies, Coffee Cake, Cakes and many other things.

Master Mix (Bisquick)
5 Pounds (20 cups) of all purpose flour
2 1/2 cups dry milk solids
3/4 cup double acting baking powder
3 Tbs salt
2 Tbs cream of tartar
1/2 cup sugar
2 pounds (4 cups) vegetable shortening

Stir baking powder, salt, cream of tartar, dry milk, and sugar into unsifted flour. Then sift all together and cut shortening into flour mixture until it looks like cornmeal.

I just made this , cooked for 3.5 hours on low and it's soupy in the center. Should I have cooked it on high? Tastes good but looks like pumpkin pie soup!!!
