Cucumber sandwiches
 
Just found this out from a friend. Take 1 envelope of Italian dressing, mix with 8 oz cream cheese. Spread on any good grain or wheat bread. Slice cucumbers and place on bread. Great for parties. Could also use on crackers as an appetizer.

My mother used to do this many years ago. great for a quick lunch or late snack. I try to buy seedless. Little pricey but saves the gastro.

sprinkle with a little paprika, it not only adds another flavor but the color is wonderful. Have served them for years.

Looks great when bread is cut out with a glass and all placed on top. Yummy!

I make this but I put it on pumpernickel rounds and sprinkle with dill. Very good.

I took cuke sandwiches to school when I was little and still had them for lunch until July when I gave up bread. Now I just eat the plain cucumber! Love them!!
I'll keep the recipe for entertaining, though!

I made a couple of cucumber sandwiches the other day.
Sliced cucumbers, peeled, sliced tomatoes <--both from the garden.
I added a 1/2 of avocado smashed, salt and peppered lightly.

DH could hardly eat the whole thing!

We used those miniature crispy bread slices from the deli and made these for my daughter's wedding reception. Topped with a sprig of fresh thyme

I grew up eating them on pumpernickel with butter not cheese. I had some cucumber slices at a wedding once that had a small round circle of cream cheese then a dollop of apricot jam in the center. Loved them and make them for parties too.. inexpensive and fun.
