Anyone have a good cucumber sandwich recipe? I love them but, have never made them.

My English friend spreads softened butter on slices of white bread and puts thinly sliced cucumbers and dill weed in between. Cut the crusts off (of course!) and slice on the diagonal twice.

I've also tried a mixture of butter and cream cheese and different breads (pumpernickel, rye, wheat). My kids and their friends love "finger sandwiches." I make PB&J finger sammies too.

We keep it simple...7-grain bread, spread with plain cream cheese and top with thinly sliced cucumbers. I hate cucumbers but I LOVE these sandwiches! We eat them open face.

I just use mayo and cucumbers on reg. bread, love em!

Simple is my method - whole wheat bread, light mayo on each slice, thinly sliced cucumbers overlapping on the bread, salt and pepper ... mmm ... a very good summer sandwich!

we use cream cheese and cucumbers on party bread - rye, usually - we buy it at the end of the bread aisle - it's miniature loaves of 'party bread'.

Reva, I almost forgot about party bread. Party bread, cheese wiz, and a sliced green olive...so yummy!

Mum is from the UK and all she did was butter bread, put thinly sliced cucumbers, salt & pepper. Sunday tea usually included these and fresh scones. :)

I love cucumber sandwiches,I take 2 slices of bread if making for company I trim off crust but for just me I use cream cheese sliced cucumber and sometimes slice onions and pepper .So yummy

I have been wanting to try a cucumber sandwich ever since I saw this post back in Feb. Cucumber sandwich - who would have thunk??? So today I did. In fact I made 3 of them - 1 with butter, 1 with mayo & 1 with hummus - all with S&P. The one with butter won - hands down!! YUM!! And for sure you have to cut the crusts off!!! :lol:

Both my parents were from Wales and we had these often, best when the cukes came from our own garden. 2 slices thinly sliced bread, crusts removed, butter each slice, cover 1 slice with thinly slices cukes (overlapping), little S&P, put the lid on and slice criss-cross. YUM. Butter is best (not margarine). Sometimes it was a cheese sandwich done the same way.

Well, I was reading and found this. My recipe is a year late, but is so good. We make these for baby or bridal showers. People love them!

2 or 3 cucmbers, sliced thin. I usually peel them first.
Italian salad dressing in a bottle
1 8 oz. cream cheese
garlic powder to taste
white sandwich bread

Put sliced cucumbers in a ziplock bag. Pour Italian dressing over the cucubers. It may not take the whole bottle. Refrigerate until ready to serve. Mix softened cream cheese with a little garlic powder. Not too much.
Cut bread into triangles, squares, or small circles. Remove crusts first. Drain cucumbers and put one on each sandwich when ready to serve.
Very tasty. Wonderful for parties.

Hi

Over here in the UK we normally do the following.

Use a good White Loaf sliced, peel the cucumber first the thinly slice.
Use a good quality butter not spread and put the cucumber on the buttered bread, sprinkle malt vingar on the cucumber and place top butter slice on.
Cut into triangles and cut of the crusts.
hey presto cucumber sandwiches, but really us british do not eat them lol

I just peel them add a slice of onion and mayo.
