Cucumber side dish
 
I like English cucumbers but any will work. This goes good with beef.

Remove most of peeling from 2 cucumbers & slice. I like them thin but not super thin. Layer with sliced onions.

Heat to boiling 1/2 cup white vinegar & 1/4 cup white sugar to dissolve sugar. Add salt & pepper
Pour over cucumbers & onions. Refrigerate a day or two then serve.

we make these quite often, I call them fresh pickles.

We usually do them the same day and add some dill to the mix, was the first step to cooking dinner. I was using the term "quickle" before I heard it on Chopped. Grandma used a fork to score down the sides on her fresh ones. I usually peel grocery store cucumbers.

Grandma also used to pickle sweet onions that way. Not the green sprouts but like rings of Walla Walla sweets. I developed the taste for them but no one else in the family is a fan. They don't appreciate sour red cabbage either.

You can take some of the left over liquid and thin out some yogurt or sour cream, either as a separate Tzatziki sauce or to serve mixed together.

In the summer, I usually have a jar of these in my fridge daily.

These are a family favorite while growing up. My sister and I use regular cucumbers and red onions. With the same amount of vinegar and sugar and the red onions sliced thin, cucumbers a little less than 1/2" thick.

My mom used to make them but no sugar just vinegar and water with onions and cucumbers. I do it occasionally but my family doesn't care for it. Will need to try it with the sugar and see if it changes their minds.
