Sounds great. I just made & froze 3 rolls of date nut pinwheel cookies.Have 2 rolls of the apricot cookie dough in freezer too, so getting a good start.
I can't use any artifical sweetners due to severe migranes.Oldest DD is in WW & she loves it....will send her your recipe.

I made mine today...or at least they;re rolled,covered & in freezer. DH wanted me to bake some, but we have cake to finish 1st. Is it any wonder I'm fluffy? :lol:

My mother used to make these every Christmas. I love them! I make them now and when I take them places, people love them. The only thing I do different is don't put the nuts in with the filling. I spread the filling, then sprinkle the nuts before I roll them. I always seemed to tear the dough when I spread it with the nuts.

I don't have much problem with dough tearing.I roll them to a certain size, not as thin as paper.The filling is very thick & I spread it with back of spoon.
But whatever works is the way to go.DH says "she gives them away?" :roll:He's such a cookie guy.Don't think he ever met a cookie he didn't like.
