Well, I have tried Baked Oatmeal before and although the recipe had received rave reviews DH and I really didn't care for it. I came across another recipe yesterday and it looked promising so I gave it a try for breakfast this morning. Man was it GOOD!! Tastes like dessert rather than a very healthy breakfast. Now for the alterations that I made because I didn't have everything on hand.
I had 7 grain cereal rather than oatmeal
I used 2 honey crisp apples cored but left the peels on and sliced them. Used some dried cranberries (Craisins). Added about 1 T of orange marmalade and cut the maple syrup amount in half. Also, because we are lactose intolerant, I had light vanilla yogurt on hand but no milk so I took half water and half vanilla yogurt for the liquid. (I also added about 1/2 cup additional liquid (water)) DH said he was going to have another portion after dinner tonight and eat it for dessert. We didn't add any additional sweetener but I did spray on some spray whipped cream from a can to dress it up when I served it. We will be making this frequently with many different flavor changes. This is really good! I just made it for a late breakfast. I love oatmeal, DH not so much. I used apples and cranberries and substituted honey for the maple syrup. Delish--DH had seconds! Thanks for sharing, this one is a keeper.

I had this a few weeks ago at a B&B where I go for quilt retreats. It was wonderful. I do want to try it with steel cut oats, but if that doesn't work it is still a keeper.

Glad to see a report with honey as the sweetener. I had considered that. I make my own "maple syrup" by taking a container of agave nectar that we purchase from Costco or Sam's Club (I have forgotten which one) and add a teaspoon of Mapeline flavoring to it. DH is prediabetic and agave is low glycemic so we use it or the maple flavored agave on many things. It is great on pancakes or french toast in addition to apple sauce. Glad you liked it! Ann in TN

This sounds delicious but some of the other recipes sound awesome. I will have to go back to the website and search some more. Thanks for the website. ( You have ruined my diet)

Bet you used the good old Maine blueberries.
Wished I could get some of them out here in the
mid west. I used to pick them along the side of the
road up there when I was in my early teens. i love Maine
except the winter months.
