I learned something new this week about making spaghetti. Instead of using pasta with your spaghetti sauce, use broccoli slaw. This is so easy. Slowly stir fry the broccoli slaw in a little bit of olive oil until tender. I made the sauce adding bell pepper, onion, garlic, portabello mushrooms and meatballs and all the spices. I spooned the sauce over the broccoli slaw stir fry, took a bite and thought I was in heaven. I got a lot of veggies and and the correct amount of protein this way. It is no fun being diabetic, so having something that tastes really good is a definate plus. I didn't miss the pasta one bit.

Wow that sounds awesome! I am diabetic also and have a real problem with spaghetti because my hubby wants it at least once a week. I do make homemade so I can control the ingredients but am definitely going to try the broccoli slaw!

I recently was taken off my diabetic meds. I have lost over 65 pounds. I had the lap band surgery and I am doing really well with it. Prior to the surgery, to increase protien and lower carb intake, I switch to whole wheat pasta. I don't care for the spaghetti or macoroni, but the angel hair is awesome.

I can't wait to try the slaw, that sounds fantastic.

champagnebubbles 02-11-2011 08:33 PM

Great idea! I will be using this idea!

fayzer 02-11-2011 08:48 PM

I gave my husband a bite of this and he LOVED it. Too bad, I only made enough for me as I thought he would want the pasta!

I am proud of you. 65 pounds! That is great. We have been using whole wheat pasta too. Doc said, "eat more vegetables", hence all the experimenting.

I have lost 50 and need to lose 7+ to get under 200 pounds. I can't wait to get under 200 lbs. I am setting reasonable goals, I am eating right and exercising. Had a knee replacement so the exercising isn't where it needs to be, but it has only been 3 months since my surgery.

sewwhat85 02-11-2011 09:24 PM

that sounds great

hobo2000 02-11-2011 09:51 PM

Try the spaghetti squash. It is easy and delicious and all of my grandkids love it.

Rhonda 02-11-2011 09:55 PM

I never cared for the spagetti squash but I would like to try the broccoli slaw. Is that something you do yourself? How do you make the broccoli slaw?

Mrs B 02-12-2011 01:42 AM

Yes Rhonda, that's my question too. What the heck is broccoli slaw?

loishe 02-12-2011 03:34 AM

We really like spaghetti squash, but will have to try the broccoli slaw!

Helenq 02-12-2011 04:37 AM

Broccoli Slaw is shredded broccoli, found precut in bags. Our store carries it in the wrapped/bagged vegatable section. I have used this in other recipes (not so good for diabetics). I will be giving this a try!!!!
Thanks

CarrieAnne 02-12-2011 06:40 AM

Great job!!!

Broccoli slaw is available, already shredded, in the produce department. It has shredded carrot in it also. There is no prep except to open the bag and stir fry.

Rhonda 02-12-2011 09:10 AM

will have to try this!

2manyprojects 02-12-2011 11:14 AM

I like to use spaghetti squash when in season, I am not bu DBF is and your right, so hard to cook for proper carb-protein combo

jlm5419 02-12-2011 02:13 PM

I have also used zucchini with pasta sauces, replacing the pasta with zucchini. It is wonderful with Alfredo sauce as well as tomato-based sauce. I had not thought of shredded broccoli - must try it.

Thank you for the information. I don't know if it is available in Australia I have never seen it but I'm sure I can make it myself now that I know what it is. BTW I am also diabetic and always on the lookout for new recipes. So thank you very much for sharing this.

dotlette 02-12-2011 05:43 PM

Barb130 02-12-2011 07:35 PM

another good substitute is spagetti squash. add your spagetti sauce to it and its just like eating spagetti. and its low carb.

I am on Weight Watchers as well as being borderline diabetic so this will help me. My sugars have dropped a bunch since starting this eating program. :D

nlgh 02-12-2011 09:39 PM

I am diabetic and glad to hear that brocoli slaw works good as a substitute for pasta. I will definitly use it the next time I want spaghetti. I live alone, too, so do not always cook at home meals.

Katiequiltsalot 02-13-2011 11:42 AM

Well I'm not a diabetic, but my mother is. I'll have to try it!

gmcsewer 02-13-2011 11:51 AM

I love this idea> We use spaghetti squash with meat sauces. I also use the broccoli slaw with sugar fee or lite lemon yogurt to make a very low cal slaw.

jnagy1206 02-13-2011 02:26 PM

Another great substitute for spaghetti.....cut zucchini lenghtwise & slice into strips & gently stir fry to desired tenderness. We enjoy ours more crisp tender. Then serve w/ sauce, meatballs, etc. Yummy! And you don't feel deprived.

lanagan 02-13-2011 03:25 PM

Where do you find broccolli slaw in the store?

fayzer 02-13-2011 03:42 PM

It is in the produce department, usually at the end of the bags of salad. If you don't see it, ask. I love using this produce. It is inexpensive and I don't have to cut up anything. I like quick, good tasting meals.

patsyo56721 02-14-2011 03:43 AM

My husband does not like spaghetti but I enjoy it and I use canned bean sprouts and canned spaghetti sauce. I am not a diabetic but I try to do this losing weight.

KimmieH 02-14-2011 04:39 PM

congrats chuck! do you have problems with pasta?? i sometimes do...maybe i should try the angel hair?
(im down 70 thanks to the band)

I had a lapband done sept 2009..I have lost 83 pounds so far....
I eat NO pasta, breads, or other starchy carbs.
Miss pasta, as I lived in Italy for 3 years and can really do some great cooking....but I make it for the family and eat the parts I can!

fayzer 02-15-2011 08:30 PM

Good for you Jacquie!

jlm5419 02-16-2011 09:10 AM

Oooh! I did this last night - made spaghetti sauce and served it over the broccoli slaw, and it was delish! We will definitely have this again. My hubby usually won't eat broccoli, but he did last night and said it was good! :D

blueangel 09-30-2011 03:51 PM

Dreamfields pasta doesn't raise your blood sugar like other pasta.

jaciqltznok 09-30-2011 04:49 PM
