Diet cake!!!

Instead of putting oil, eggs, water, etc. in your storebought cake mix, use one 12-oz. can of diet soda!!!
Use dark sodas (Coke, Pepsi, Dr. Pepper) for chocolate cakes and light (Mt. Dew, Sprite, 7-up) for white or yellow cakes.

I made one today and used a sugar-free cake mix and a diet Pepsi. It's 120 calories per 1/6th of the cake!
Delicious!!

Is the can of diet soda all that you put in the cake mix ?

Does it raise as a normal cake and then what do you use for topping? fruit? cool whip? flavored sauces???? Sounds like something to take to a quilt retreat

Pat Grant 02-04-2012 02:07 PM

One can of soda is the only ingredient! Sounds wacky, right? It is incredibly delicious and moist! At about 120 calories for 1/6th of the cake - eat!

Pat Grant 02-04-2012 02:12 PM

I like to use "CoolWhip Free" because it's fat-free; but I've used sugar-free frosting from a can. I have dusted it with powered sugar. Anything will work. It might raise slightly less than a regular cake now that I think about. Enjoy!

I use diet/fat free puddings for toppings...they work great!

mythreesuns 02-04-2012 04:39 PM

If you use sugar free pudding...use skim milk...and do not use as much milk..it will make the frosting thicker and tastier or you can also add knox gelatin (unflavored) to use less pudding to thicken the pudding up.

A white or yellow cake with fresh fruit topping sounds good too! Thanks!

Caswews 02-05-2012 06:25 AM

sounds good .. will have to pass that one on ! For sure Thanks for sharing !!

Thanks, for the heads up, you can also use a can of pumpkin and it cuts out the eggs and oil. Makes a really moist cake, great in a yellow cake mix and add a little pk pie spice for extra zing

Pat Grant 02-05-2012 08:21 AM

Great idea!!

lynnie 02-05-2012 08:23 AM

yum, so that means i can eat the whole cake for the = of a slice of regular?????

ohhhh diet cherry in a chocolate cae, lets get ideas going here!!!!!!

lynnie 02-05-2012 08:25 AM

one of the cooks on tv said if you add teaspoon of vanilla to the cool whip, it takes away the store bought flavor and makes it taste homemade

Twisted Quilter 02-05-2012 08:31 AM

Darn...all I have is yellow cake mix and diet coke. Do I dare???

barb55 02-05-2012 12:12 PM

Were do you get sugar free cake mixes?

athomenow 02-05-2012 12:41 PM

Kroger has them and probably most stores as well. I have found them at the dollar store also.

I tried the 3 2 1 cake someone posted on here and put blackberries in a spice cake mix. It turned out soooooo good. This is our regular dessert right now. Nothing left to tempt you! One serving.

What an Awesome recipe!! :D I just copied it & sent it to my DS & DDIL. Our grandson can't have any sugar in his diet, so I am thinking what a way for him to have a treat!! Thank you so much for sharing with all of us.

Diet Cake

I have never tried it with a white or yellow cake. Someone told me they used 7-Up in a white cake mix and it was bland. I have only used diet Coke, Dr. Pepper and Diet Pepsi w/lime in a chocolate cake and it is fabulous!! I really watch the time it has been in the oven though and 5 mins. before the box says it's done I start checking it. The texture is wonderful, almost gooey! So good!

hawaiilove 02-10-2012 10:29 AM

WOW - that's great - thanks Pat.

Handcraftsbyjen 03-12-2012 07:33 PM
