Doe's anyone have a name for this recipe? Got this from my Mom..
I got this recipe from my Mom. I don't know if she made it up herself. I've never seen or heard of anyone
else making it..I call it "bean and bacon open face sandwiches".. for each sandwich: fry 2 or 3 slices of bacon..while the bacon is frying toast 1 slice of bread...whatever kind you like open a can of pork and beans into a bowl. Mix in some prepared mustard, a little brown sugar. { or you could use a can of the seasoned beans} put toasted bread on a baking sheet, spoon on some beans to cover it, put a slice of cheese on top of that and warm it up in a 350 degree oven for about 10 min. till cheese is melted and beans are warm. put on plate, put bacon on top and enjoy !! |
I've not done it this way, but we do eat something similar. We season our baked beans and add bacon. Shred cheese over it and top with canned biscuits. Bake until the biscuits are done. I'm sure the taste would be very similar.
I really don't have a name for our dish either. I got it from my MIL years ago. |
Sounds like something your mother would have jusst done on the spur of the moment, but sounds like something I might try. Thanks.

I put the Bacon and Cheese Whiz on the toast, pour on the hot beans and skip the oven step.

Just call it "Mom's Recipe" or "Full of Beans." Looks like it doesn't have an official name...yet, but someone on this Board may know it. :-)

The original name was beans on toast. My grandmother made it for my father, and he used to make it up for us. During the depression bacon, bread and bacon were part of the main staples. Like Kraft dinner was for our generation. It was a simple and filling meal with little cost. The cheese on top is a nice touch. My Dad would put thin slices of a hot dog on top. He would also use two thick slices of bread and do it up like a grilled cheese sandwich.

Our mom used to make this. We always put mayo on the bread first (after toasted), then the beans, cheese and bacon. So yummy!

Don't the British folks eat "beans on toast"? maybe this is it. Sure sounds like something I'd try at least once. How can you miss.

My Mother, 89 when she died in 2007, always made this when I was growing up and after. She called it bean sandwiches. She toasted the bread, put slices on a cookie sheet, split a can(s) of pork and beans on the slices. She then put a slice of cheese on each and covered the cheese with 4 half slices of bacon. She them put it in the oven to broil the bacon slowly done. When I asked about the receipe she told me her Mother fixed it during the depression years when she was growing up. Her Father raised pigs to make cured hams and bacon for their meat and to sell any extra they might have along with raising chickens and a cow for milk. Though we are truly blessed with so much more now it is still a favorite of mine and I fix them for my family every now and then. Brings a lot of great memories back when I would help my Mother in the kitchen.

Sounds like a "GO FAR" recipe to me. the bread helped to fill everyone up. Sounds really good.

I worked at a stable and this was often the lunch sandwich. I like them just fine, I can’t get the dh to want to try. I just thought Grandpa B. made up the recipe...My mom who lived during the depression never made or even mentioned these. If i remember correctly they them Bean Bacon sandwiches.

Both of my parents graduated from high school in 1933 - depression era.
Since mother made homemade bread and homemade beans, having a cold bean sandwich was a special treat. We would scoop the beans so that the liquid remained in the bowl. Place the beans on top of the bread and smash them down with a fork. Top with mustard or catsup and another slice of homemade bread. My version today would include drained beans on whole wheat bread, top with thick slice of sweet onion and eat as an open face sandwich. Please excuse me. I'm drooling............. |
this does sound like a budget stretcher! The closest thing we ever ate was good ole weenies and beans. With 5 kids we had it several times a month. And loved it

My family calls that a "Pork & Bean Sandwich." We've never met anyone else who made them. Now my sis in law and my dh can know we aren't so weird after all! Well, at least not in this one thing.

These comments are so interesting-I never heard of bean sandwiches--but since a person never gets too old to learn-Im 59- this recipe will definitly be added to my menu-we love beans and bacon in my family--I am always looking for a quick meal--retired now with arthritis--this sounds delicious--I will add a tossed side salad when I make this recipe---thanks so much--

The reason I fry the bacon separate is that when I put the raw bacon on top and stuck it in the broiler, the grease
would go down into the sandwich, and also, I would most times burn the bacon..:D |
Yes we did when I was growing up but usually it was just beans or if we had lots of eggs mum would fry the eggs and put them on top.

I make a recipe called Bean Stach-up's. It is a little quicker. You can toast your bread but don't have to. You can add extra bacon (broken pieces). For a quick dish I warm my bread slices in micro wave (keep in ref.) I use bean and bacon soup mixed with 1/4 cup water,you can add a little more if you want it a little creamer. Add your cooked bacon to the soup mixture spread over bread. I top each with slice of tomato,thin slice of onion and a slice of cheese. Place plate in microwave and heat till cheese melts about 1 min. You can mix mayonnaise with mustard and place a dollop on top if you choose. Just mix mayonnaise and mustard to taste but DO NOT add the mayonnaise till you are ready to serve as it curdles when heated. Will be spending a day out soon and this will be out dinner as it is quick and DH loves it. So do I. It is just the 2 of us and one can of soup is enough. I use 1 1/2 slices bread on each plate. Enjoy.

My Dad loved bean sandwiches! Left over homemade Boston baked beans on buttered bread! Pretty simple.

We called them Beanwiches: 1 slice of toast with leftover baked beans spread on it and a slice of cheese on top. The reheated beans would melt the cheese.

Nothing better than just a plain old baked bean sandwich with lettuce and a little Miracle whip on it.

my mother made us "depression sandwiches" but it was beans on bread that were broiled and when things were good we had a slice of cheese on top. Never had the bacon but we grew up in a fairly poor family. Just didn't know it

You guys amaze me with all the interesting facts that come with recipes. I love it! my mom grew up during the WAR in Germany. She never once fed us Mayonnaise. She said butter was a short commodity during the war so people used Mayo. She never wanted to be reminded of that again so I literally never tried it til in High School when I could buy a sandwich. Now imagine all these years later I love both. funny what memories are made by lifes struggles. Me? when I was so poor I had to decide how to make money stretch so the kids ate well? I ate steamed rice with a pinch of parmesean as it was cheaper than butter. that powdered cheese. I fed them instead. That was my staple for three days a week... never told them that. boy was my tail end a lot smaller too!
