My Mom used to make a cake that after it was baked, and before the 7 minute icing, you would brush it with orange juice, then ice with the 7 minute icing, and then put coconut all over it. It was really good. The problem I am having is that the cake was dense and heavier that a regular cake, so that when you put the orange juice on it, it would not turn to mush. I have tried a cake mix, a chiffon like cake, a hot milk cake, and it is not the texture I remember. Does anyone have the recipe I am talking about? Thank you for looking!

It was probably a pound cake, but you can make a decent cake that will hold up to poking and glazing by using a regular cake mix (lemon is good), then adding four eggs, a box of instant pudding, the called for oil and a cup of water. I like to skip the oil and use a cup of sour cream for the liquid, but that might be a little moist for your purposes. Your cake sounds good. I'd use a white cake mix - the BC Vanilla is good, and use the whole eggs, not just the whites.

Thanks for the recipes, but that isn't it. I remember helping to fold in egg whites. It was a layer cake. The pound cake would be too heavy. I wonder if you used l/2 the pudding, made it in layers, it would make the mix a little heavier without being as much as a pound cake? Maybe I will try that. If I ever find the recipe, I will definately share it!

It sounds like just a regular white homemade cake with the egg whites folded in like that. You could all the pudding mix. You put it in dry - don't make the pudding. It doesn't make the cake heavy, just gives it more body.

My aunt always bring one in for Thanksgiving reunion...they're the best! But a lady makes it from home and won't share the receipe....she charges like $25 per 3 layer cakes. Yikes!Hope u can find it...would like one myself! lol

Pull above link and type in Ambrosia Cake....but it doesn't have 7 min frosting on it. It has whipped topping instead
