Easter Dinner Dishes

I'm trying to decide what to fix for Easter dinner. I will have ham, but it has been so cold and rainy here and there is nothing fresh in the garden. My asparagus is not even up yet. I want something cheerful and Springy on the table. What are some family favorites that make it to your Easter dinner table? There will be only 4 or 5 of us after we have attended sunrise services, breakfast at church, and then our regular Sunday services.

Having ham also. Adding a Caesar salad, sweet potatoes, baked beans, and steamed snow pea pods and cauliflower. We'll have angel food cake with berry sauce for dessert. Only be 3 of us this year! DS and family/friends (usually 6 or 7) are heading out of town.

I'll have all of the above dishes and deviled eggs also.

Tiny new potatoes say spring to me but you can usually get them in the supermarket now. I year I did the bunny cake for dessert, it turned out cute .You do a round cake, cut it in half and ice it with cool whip and use jelly beans for the features. I used a styrofoam plate for the ears and whiskers.

My kids always request Broccoli and Cauliflower salad. It goes well with ham. Hot dinner rolls, spuds, ham gravy.

Gotta have creamed new peas and new potatoes. Coconut cake for dessert.

Tartan, I made that cake for many years. ;-) Easter is the only time I enjoy Jello "fluff" salad.

We are having ham, corn, lima beans, scalloped potatoes, rolls, deviled eggs, fruit salad and sweet potato souffle. http://www.geniuskitchen.com/recipe/...souffle-149328. We love this. The only change I make is to put 1/2 cup brown sugar in the casserole instead of 1 cup of regular sugar. I will have 30 people this year. This potato dish is also delicious. https://www.cinnamonspiceandeverythi...H26XfQ2UZXT.32. I just put the whole thing in a casserole dish and bake it that way.

I know that this is such a mid-west 1950 suggestions but how about a spring like jello. In a ring mold full of fruit like pineapple, mandarin oranges or pears all arranged in a pattern. It is a light dish and those gem tones of clear jello are spring like.
