Easy 2 ingredient Lemon Bars

These "fast and easy" recipes are great for me, espically for potlucks, etc. With Easter/Passover coming I can have these fixed in no time!

2 Ingredient Lemon Bars

Oh yeah you read that right only Two simple ingredients to make these melt in your mouth ( middle of the pie) lemon squares!
Yep this is like you cut your self a slice right out of the... middle of the pie!
This is all you need:
1 box angel food cake mix( I use Betty Crocker)
2 cans lemon pie filling
I used two 21 oz cans of Comstock pie filling ( total of 42 oz)
Mix dry cake mix and cans of pie filling together in large bowl.
I just mixed it by hand...
Pour into greased 9 x 13″ baking pan.
Bake at 350 degrees for 25 minutes or until top is starting to brown.
NOTE...Mine took the full 25 minutes to get done and did not brown on top at all :))
Cool on wire rack and sprinkle with powered sugar. It has a melt in your mouth spongy

I need to try this recipe too! I never thought of using 2 cans of pie filling. The recipe I have for these bars is 1 can of lemon pie filling and 1 box of angel food cake mix. They are frosted with cream cheese frosting. They are so easy and I always have the ingredients on hand.

We don't have canned lemon pie filling here. Will the boxed lemon instant pudding & pie filling do?
Am anxious to try them but I have never seen canned lemon pie filling here where I live.

hmmmmm.......all I can suggest is to try it. I don't know why it wouldn't work. If you do, let us know about the outcome.....I think the canned pie filling was mainly for convience.

Well, I made this last night and let me tell you... they are delicious!! DH and I thought crushed cinnamon graham crackers and/or a nice raspberry sauce on top would be a nice simple, tasty addition. They are quick and easy. :D:D:DHardest part is not eating the WHOLE 9x13 pan of them. :D:D:D

Now that Spring is almost, kinda here...it will be fun to celebrate with beautiful lemon bar for our neighborhood party. I live in a small condo community and we can find any excuse to get together.

I made these yesterday.

Next time I will add some lemon extract as I prefer a stronger lemon flavor. They are definitely not to be eaten out of hand as they are so moist and sticky.

Can't beat the simplicity.

My hubby loves lemon bars and I hesitate to make them. This is such an easy recipe, he will get them more often now but not too often, he needs to lose some weight! Thank you for sharing.

I was so hungry for something lemon today--so I made the lemon bars with one can pie filling and an angel food cake mix---it was the old kind where you beat the egg white powder with water and then fold in the flour mixture---. I just mixed the two together and then stirred it into the pie filling --hoping it would work okkay. Well, it rose up nicely and was perfect looking when I took it out of the oven and set it on the cooling rack---as I stood there looking at it--it started to shrink on all four sides---instead of 9 x 13 it ended up 11x7 or a little less---I just stared and then started laughing til I had tears in my eyes. Tastes good tho its a little heavy and definitly dense. However, my advice is to use a one-step Betty Crocker Angel food cake mix for better results. My hubby thinks its delicious, tho!!

i could taste that Lemon Bars. Surely I will add that recipe in my collections of my favorite goodies! I love anything with lemon, mostly the quick and easy to cook or bake! Thank you for sharing and definitely will be trying that!

Last week I made these bars and added lemon zest from 2 lemons and the juice of one of the lemons. It boosted the lemony flavor nicely.

Gladygirl: I also bought the angel food cake mix that had two pouches in it. Although, I did not add water to the egg white pouch, I just dumped both in the bowl and mixed it with the lemon pie filling. It was not as tasty and was much denser so I will stick with the Betty Crocker angel food mix.
