Easy, Delicious Chip Dip!
 
Howdy y'all :)

Recently I spent some time with my niece, and she had some dip she had made that was just awesome! And it's so quick and easy to make too. Here is the recipe:


1 can of black beans (drained)
1 can of shoepeg corn (drained)
1 tomato
1 green pepper
1 onion
1/2 cup of ranch dressing

Chop up the tomato, green pepper and onion into small pieces. Mix with all the other ingredients. Even though this dip is good as soon as it's made, it does get better when it's chilled. Enjoy! :)

Hadn't heard of shoepeg corn before... did a little search, learn something new every day! Thanks sounds like a fun recipe!

She had tortilla chips, but she also said she likes to use celery sticks to dip it with. :)

We buy the shoepeg corn in the small can when we can't get corn on the cob. Tastes wonderful, even if it is canned!

I make one similar to this. I chop tomato, avocado, onion, black olives and chili peppers and mix it with a little Italian salad dressing. I also use tortilla chips to dip with.

Hubby and I were invited to the neighbors Sat evening, and I made your dip! After two hours I tasted it, and it was a bit too oniony...so I would cut back on the onion a bit. However...I added more corn (not shoepeg, but frozen from my garden) and a bit more ranch dressing. We used Dorito Scoops...but then the next day we ate it again on some Ranch Doritos, they were yummy too! I will definitely make this again...THANKS for sharing!
