Easy Terrific Toffee with Saltine Crackers
1 c. unsalted butter, 1 c. brown sugar, 2 c. semi-sweet chocolate chips (Ghiradelli good), 40 saltine crackers Preheat oven to 325. Line jelly roll pan with foil and spray. lay out 40 crackers side by side in middle. Melt sugar with butter and let boil for 5-6 min. Pour over saltine crackers and bake for 8-10 min. Let cool for 3-5 min. before sprinkling the chocolate chips. After they melt a little, spread evenly. Let cool. I put mine on cold porch to hurry. Break into pieces or cut.

My daughter made this for Christmas and it is great. I ate it until I was almost sick.

The last time I tried making that it didn't turn out. Do you know what temperature you should boil the sugar and butter to? Thanks.

I love this! Many years ago a quilting teacher brought this to class for a treat. I got the recipe from her and make it occasionally...and it is always loved by everyone who tries it.

As far as I know, this recipe needs to be made with butter to turn out. I do the toffee over graham crackers and sprinkle the tops with slivered almonds. It looks really pretty and tastes so good that I only make it at Christmas. :)

We love this one too. The microwave peanut brittle is also addictive and a favourite in our house.
