My family is on a high protein diet and I usually cook 2 dozen egg whites but we don't eat the yolks too often. Does anyone know what to do with the left over yolks? I give my dogs a few for their coat. Sometimes throw them out to the birds and critters.

There is a cake in the Old Betty Crocker Cookbook called
Sunshine Cake that takes over 12 yolks. It is the companion to a Angel Food Cake. It is a winner and great PotLuck dish to take to Church Suppers. They also freeze well. The bird would like them better in the winter when food is scarce. Good Luck Angeline |
I have a home made noodle recipe that calls for 8 to 9 egg yolks. I keep the yolks in the freezer and when I have enough I make noodles. If the noodles are not on your diet, they also freeze. Lots of us in our church donate frozen noodles to our local rescue mission. We cordinate it so we are giving them 20 or more quart bags at a time. We also donate chicken and chicken broth.
You can also cook the yolks for your pets. |
Thank you so much for asking that question. My brother raises chickens and I have the same problem with too many egg yolks. I will definitely try that cake.

I can't speak for Bubblegum, but the reason I don't use the yolks is because of cholesterol issues, so all the uses in pies, cakes and custards don't do me any good! The birds enjoy them so at least they don't go to waste.

You can freeze them seperately by using ice tray.After they freeze remove them from the tray and put in a ziplock bag and use them as needed.

When you freeze them so they stay the same when defrosted. So many things change consistency when frozen. I have never heard of this but will give it a try.

I saw it on a cooking show. They were using only the whites but saved the yolks for another day.

Unless everyone in your family has dangerously high cholesterol levels, I really don't think making an egg yolk cake (all the above suggestions are good ones) once in a while will really hurt. Eating egg yolks occasionally won't raise your blood fat levels - it's how much cholesterol you consume over a period of time that does you harm. Of course, it pays to be careful, but every now and then shouldn't matter.
What does your doctor say? You can freeze the yolks until you are ready to use them. Also you can gift a cake or other baked goods to a friend or neighbor, donate to a bake sale, church dinner, lots of bingos sell food and homemake desserts and would be happy for your donation. |
If I had that many egg yolks I might make the cake or custard or perhaps a fritatta and deliver it to a local soup kitchen. Its nice to have something different to give the families. The soup kitchen might be able to incorporate the yolks into something themselves.

This is the most wonderful cake. I just made one last sat for my aunt whom turned 86. My husbands sister used to make one for him every year for his bday. Now I do as she has passed on. I just make a what I call a drizzle frosting for it out of powdered sugar,milk, tsp butter softened. and mix and drizzle over. No certain amounts, just start with 1 cup powdered sugar , add butter then milk to the consistency needed. If u want add a half tsp vanilla.

Better to give them to the dog, cat, or birds. If you don't use them for health reasons, doesn't make much sense to use them up in a cake or pie, then eat that.
When I make scrambled eggs, usually only once a week, I use 5 eggs for the two of us, but remove 2 or 3 of the yolks. They go out to the cat. |
There are recipes that call for lots of egg yolks.
