Eggplant Parmesan Discs

Eggplant Parmesan Discs

Peel eggplant and slice ¼ - ½ inch thick circles.

Drizzle plive oil

Sprinkle with Italian seasoning, garlic powder, cayenne, prime rib rub, whatever spice you grab

Broiler on HI for 6 minutes-turn halfway

Turn again & Top each with pile of parmesan

Bake @ 425° 15-20 min

I have a eggplant and sounds good. Do you salt your egg plant first to draw out moisture?

Recipe sounds good but have the same question as Tartan on whether you draw out the moisture first or if maybe the broiling does it for you. Have a bumper crop of eggplant again this year. Have 2 plants and its given me over 12 eggplants each. My neighbors love me this year but may start hiding from me if I come again with my hands full.

Thanks...I have some eggplants from the garden, both long and fat ones. I may have to make this. I don't have any parmesan cheese, but I can do up a crumb of almonds, nooch, and seasonings that might work.

I usually salt after cooking on most everything.
