Eggplant "Steak"
 
I'm always on the lookout for good Eggplant recipes and I found this one on WW. I don't think that I can repost it on the QB, but here's the gist of it:

1 med. eggplant
cooking spray
spice blend of cumin, garlic powder, thyme, paprika, salt, and pepper
low-sodium soy sauce
olive oil

Put the whole eggplant under the broiler and cook until the skin becomes blistered, turn and blister the other side.
Wrap the eggplant in foil so that the steam helps to detach the skin.
Let stand 15 minutes.
Unwrap and carefully remove the skin.
Spray a baking pan with the cooking spray and lay the eggplant in it.
Mix oil and soy sauce together and brush on the eggplant. Sprinkle 1/3 of the spice mixture over the eggplant. Turn and repeat on the other side.
Put eggplant back under the boiler and broil until brown, about 7-8 minutes. Brush with remaining soy/oil mixture. Turn and repeat on the other side.
The eggplant should look flattened, but lightly crispy and brown on both sides.

I have not tried this recipe yet, but eggplants are on my shopping list.

Always looking for new “side” dishes. I am planning to make something similar with zucchini slabs. Brush slabs with olive oil then sprinkle with “everything bagel” spice mix. Grill.

Are you already doing the Cauliflower steaks? Same sort of concept, usual spice is turmeric.

But back to eggplant, I make a mean babaganoush!

I typically grill or broil the eggplant. Here's some basic directions - it's a pretty basic dish.

My brother and I once had this at a mostly vegetarian restaurant in the Catskills. They served it Parmesean style - with dollops of tomato sauce and cheese on top. Delicious! And very filling. I think it was served simply, with a salad and crusty bread.

We planted eggplant and ate one with dinner last night!
Eggplant Discs:
Preheat oven to 425. (heats the oven for later)
Peel and cut into 1/4" rounds.
Single layer in broiler pan-brush with olive oil and add spices.
Broil on high for 6 minutes-turning halfway (olive oil and spices again)
Turn again, (add tomato sauce or leave it off), top generously with parmesan cheese.
Bake at 425 for 15-20 minutes.
