Fat Free Biscotti
 
I love to dip a fresh biscotti in my coffee in the morning, especially in the cold wintertime. It feels so indulgent. I made some chocolate hazelnut biscotti yesterday and had one this morning with my cuppa. I used the recipe in Veganomicon, by Isa Chandra Moskowitz. I'm going to try her recipe for Lemon almond Biscotti next:

There is no fat in them, no eggs either. The recipes use ground flax seed to replace the eggs. They're pretty much guilt free. They're also really easy to make.

Well, they do have quite a bit of sugar and they have flour so maybe not guilt free, but lower guilt for sure.

Agree. Seems like quite a bit of sugar.
Then, if you dress them up with the icing, then even more sugar.

Too, this recipe is not fat free ... 1/2 cup coconut oil
Coconut oil is high in saturated fats.

My favorite biscotti recipe has 1 cup sugar, 1/4 olive oil, and four eggs. It makes a big batch, so I eat one or two with no guilt.
I usually mix dried cranberries in the dough with orange zest. I keep in in a glass jar on the counter. Looks as good as it tastes. The older is gets the drier and perfect for coffee or tea. Usually, it doesn't last long enough to get that dry. I gave it as Christmas gifts one year and regret it. Now everyone expects it every year. This next year I'm putting the recipe in a pretty jar with bow.

Sorry, but I have not tried the lemon-almond biscotti recipe yet. I made the chocolate-hazelnut recipe, which has no icing. I'll try to find the recipe for you all and post it. It may have some fat in it, I can't remember, but not a lot considering it makes a big batch and I usually only have one biscotti with my coffee. No eggs either, so no cholesterol. As for sugar, well, it is a sweet that should be eaten in moderation.
