we have to have brown gravy.

you could use some wheat flour and that will make your gravy brown. and make it a bit healthier too. :)

Figured I would share this with everyone. Its a recipe I did tonight and it was good.

So you need some boneless pork chops or chicken breasts, 2 tbsp of olive oil, 2 tbps of butter, 1/2 teaspoon of salt and pepper, 1 large yellow onion chopped, 1 green and 1 red and 1 yellow bell pepper seeded and diced, 3 cloves of garlic, 3 tbps of all purpose flour, 21/2 cups of chicken broth, 1/4 cup heavy cream. and other seasonings to your taste.( I use parsley, thyme, basil and rosemary).

Season your pork chops or chicken. In a very large frying pan, heat the oil over medium high heat and cook pork chops(chicken) until browned which takes about 3 minutes on each side and then transfer them to a plate.

In the frying pan add your butter and reduce the heat to medium. Then add in the onion, the peppers and the garlic. Cover and cook until they are tender(takes about 8 to 10 minutes). Then stir in your seasonings sprinkle in the flour as well and gradually stir the stock in and bring to a simmer. (this essentially makes a gravy).

Return your chops or chicken to the pan and reduce the heat to medium low and cook until meat is done all the way through. Stir in the cream slowly.

**** When your chops or chicken is nearly done make sure you start some rice to ladle your chops(chicken) and gravy over. You want the rice to get done about the same time as your meat and gravy.

To make it healthier, use wheat flour instead of white. Omit the butter, just add a little extra olive oil(which is healthy for you), cut away the fat from the pork chops or just look for lean cuts of pork chops, and instead of cream use a little 1% Low Fat milk. I also use the Swanson chicken broth that is 33% less sodium and I do not add any more salt in while I am cooking it or even after I cook it. All those other spices make the dish perfectly seasoned.
