Flourless Peanut Butter Cookies
I love these cookies. They are really fast to make!
•1 cup of brown sugar •1 cup of creamy peanut butter •1 egg •chocolate chips for the top of each cookie Beat the sugar, peanut butter and egg with electric mixer until combined. Shape into 2" cookies and place on a non-greased cookie sheet. Top each cookie with three chocolate chips . Bake at 350° F for ten minutes. Leave to cool for five minutes on the cookie sheet before putting on cooling rack to cool completely. |
you can also make them with white sugar. Great for gluten-free diets (check the PB for gluten but most is GF).

I have some leftover candy kisses so think I will make these and put a kiss on top of each. I am sure they will be good .can't go wrong with peanut butter and chocolate!

Those look good! Do they flatten out as they bake, or hold their shape?

This was one of the first things my sister who is differently abled learned to bake. Every year she bakes them for me.

I make a very similar recipe, the differences are that I use white flour and 1 tsp of vanilla, and press a chocolate kiss into the cookie when they come out of the oven (I have used chocolate chips before, since I don't always have kisses on hand, plus, the chocolate chips are less expensive).
I should try them with the brown sugar sometime. |
brown sugar and real butter always make cookies better IMO.

I make monster cookies, which are similar, but with oats, so a little more breakfasty and substantial. Oats are gluten free and Bob's Old Red Mill does sell oats processed at a gluten-free facility. I also cut the sugar in half when I make them.
