Freezing sweet corn
 
Froze another 12 bags of sweet corn this morning. It goes to our married grandkids - their little kids are crazy about it.
Have cold water in sink & add a chunk of ice. I don’t use ice cubes, they disappear too fast. This time of the year I keep big ice chunks in the freezer in plastic containers that hold about 2 quarts.

10 to 11 cups fresh corn cut off the cobs
6 Tblsp real butter (cut in thin slices so it melts quicker)
Almost 1 Tblsp salt
Almost 2 Tblsps white sugar
1 cup boiling water
Bring to rapid boil, back off heat but keep boiling for 3 to 3.5 minutes. Remove from heat and let it sit just a bit. Set pan of corn in ice water, test it slowly so water doesn’t come over sides of pan, release some water if necessary. Stir now and then, then leave it until the heat is gone. Cool corn completely & measure into freezer bags. Flatten the bags to save freezer space.

I’ve explained in detail for those that have never done frozen corn.

Good idea!!! Even if you don't grow corn, it's so cheap at the market right now. It's worth stocking up, if you have the freezer space.

I freeze corn on the cob all the time. I just bring it home from the store, shuck it & wash it & then dry the ears (I don't cut the corn off the cobs) & put them in vaccum sealer bags & vaccum them & then freeze. When I'm ready to eat them I just cut open the freezer bags & fully boil the corn cobs for about 15 minutes.....delicious! I always write on my freezer bags the date & sometimes I will write which store I bought them from so I know what store has the best tasting corn. https://cdn.quiltingboard.com/images/smilies/smile.png I still have a lot in the freezer right now.

I love vacuumed packed corn but can't find it now in the stores. I have almost no freezer space and eat very little anyway, so store bought is the way I go, when I can find what i want.

I experimented this year with freezing it on the cob. Blanch 6 minutes, into an ice bath, cool completely and then vacuum sealed and into the freezer.
Time will tell how it went.

I freeze it with shuck and silk on it.. Just put in bag freeze it, when ready to eat let thaw cut silk off put in microwave 4 minutes on high. Great corn on the cob.

Our neighbors were selling sweet field corn this summer. we purchased, shucked, blanched and froze. All the family loves this corn on the cob. It always tastes fresh from the field.
