Fresh corn.......
 
So, since it is fresh corn time here in Illinois, I am in my glory...I love fresh corn on the cob! Yesterday I made a small batch of potato salad and had one ear in fridge and thought...hmm, why not. So I popped in micro for 3minutes, slid it put of the husk,ran under cold water to cool and cut kernels from cob and mixed into potato salad....and it was good! A new recipe has been born! Any other interesting corn recipes out there? Next will be zucchini overload!!!!

I love it plain, just steamed, no butter or salt. Yum! It would make delicious scalloped corn.

There has been a recipe going around Facebook that has corn, tomato's and avocado (and a few other things as well). Three of my real friends made the recipe and they all proclaimed it delicious.

I'll see if I can find it.

We had a Zucchini and Corn dish Wednesday at our Monthly Lunch and Learn, that was awesome. Made it Thursday. It is available on the University of Kentucky Cooperative Extension Service Website.

Zucchini and Corn

1/2 cup sliced green onion
2 Tablespoons margarine (I used butter)
4 cups fresh corn, cut from the cob (I used frozen, thawed)
1 large zucchini, cut in 1/4" slices (next time I will add more)
1 medium tomato, peeled and chopped
1 tablespoon chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon pepper

Makes 6 3/4 cup servings.

1. Sauté green onion in margarine until tender.

2. Stir in corn and zucchini and cook 10 minutes until tender.

3 Add tomato, parsley and seasonings, cook until heated.

NOTE: Substitute other favorite vegetables as available. Try yellow squash, cubed eggplant, or peppers.

We have so many zucchini!

I just made corn cob jelly. It actually tasted pretty good.

Fresh corn and tomatos and a potato salad sandwich- my favorite sumer snack! Put the water on and go pick the corn and tomatos and, of course, soft white bread for the sandwich.

I used to always put fresh corn into the freezer during season. Just lower the corn into simmering water for about 2 minutes and when it is cool enough to handle cut it off the cob. Put into pint baggies and freeze for those long winter nights and corn chowder or taco soup.

Diverticulitis prevents me form enjoying corn anymore. But, I used to love it frozen and ready to reheat for a meal.

I still make Chow chow for friends and family though. They would be very disappointed if I didn't.

Gee whilikers, y'all - my blood sugar just went up 200 points just reading these replies!!!

Here in south Alabama, our corn season is over and done with, but we had a great one! Now I'm wishing we had put up a bushel of that Silver King corn . . . . .

Corn on cob, cooks in dishwasher... Discovered this as I was working in military base, their micro broken, and soldier wife brought in batch of corn, by time get home, it would wilt in heat.. So couldn't wait for fresh corn, threw in 1doz. in dishwasher. Imagine the officers expressions.. I was civilian staff..

I am so jealous! Best corn on cob is from Midwest. Last time we had really good corn was August 2004. Son had a garden. Ate fresh veggies everyday. Gained weight but healthy weight. I'll tell you a good breakfast is to scramble eggs and throw some corn in it. Not like an omelet just eggs and corn. Yumm! Your potato salad sounds like a "Why Not Salad".

I love fresh corn, creamed corn soup, and of course you can always make it with cornbread/mix and it comes out a great addition to a corn bread that is super with a fresh chili. Never a day I couldn't eat corn. :)

Rosemary Corn
 
One of my favorite is to boil the corn in a dutch oven. Quickly drain the corn and remove. Place some butter in the bottom of the pan and melt. Add some 'bruised' fresh rosemary (place between wax paper and pound/crush). Move rosemary around in the melted butter until the 'scent' is released. Add the cooked corn back and mix/roll in the butter. Salt and pepper and try not to eat too much.

Put 1/4 cup of water in your crockpot. Add buttered ears of fresh corn and let it cook on low for three hours. Al ready to eat!

OMG. I couldn't wait three hours...pop ours in micro in husk for 3 min., then they slide right out of that husk...all that silk too!

Oh I cannot wait for the Zuchini overload ..I am hoping someone in the neighborhood will have pity on me (as I didn't plant any this year) and give me some of their excess !LOL

My mom makes a yummy side dish sauteing mushrooms and corn off the cob in bacon fat....so good!

An old Farm Journal recipe for fresh corn cut off the cob:

Indian Squaw Corn

Fry abut four or five slices of bacon (You can cut the slices with kitchen scissors) until done to your liking
Throw in four cups of cut fresh corn
Break three or four fresh eggs into the mixture
salt and season to your taste.

Stir until warmed through and eggs are cooked.

Found the recipe more than sixty five years ago, and its a favorite of my dh who asks for it from time to time. He was raised on the farm, too, but had never tried it until after we were married.

This sounds good...minus the jalapeño pepper..for me anyway!

Sounds like this might be lunch today....just bought doz white corn from farm down the road....yummy.

I have a favorite, when steaming and serving with butter and salt gets dull...

Soak husks until good and wet so they won't burn, peel back carefully, butter them with a flavored butter (powdered cumin, rosemary, oregano, a little paprika or something to give it heat), and tuck the husks back around the corn. Grill until charred a bit on each side. Yum!

There is a new way of cooking corn on the cob that is really popular right now. You keep all of the husk on, including the silk - do not disturb it at all. Slice about an inch off of the bottom of the cob - takes a really sharp knife - so be careful. Microwave it for 2 minutes - let it sit in the microwave for another two minutes. Then take it out with a potholder and hold it upright by the husk with the silk in your grasp and shake out the whole corn cob. It comes out clean with no silks at all. You can go to UTube and find videos of this method.

I always make soup. I sauté onions and garlic then add chicken broth and then I add corn off the cob no need to cook it first it cooks in the soup .. add a roué to make it thicker and whola a new way to eat your corn. you can freeze it easily great winter snack. I do it in one cup servings in small Tupperware I have and it works great then just micro to eat. you can add some diced carrots for color, green onion for color (add near the end to keep the color) or cheddar cheese for deep sweet flavor.. so many options and its an easy creamed soup.

I clean fresh corn on the cob, put it into a boiling bath water with milk added to it for three or four minutes, quickly put the ears into ice water to cool and bag into freezer bags and freeze four ears to the package. Then when I take out a package I put each ear into the microwave for two and one half minutnes full power. Rotate the ear and give it another two and one half minutes to finish. So in five minutes, no mess, fresh sweet corn is ready to eat. My FIL at 92 years young taught me this trick. So easy to do...I even double it up to two ears with excellent results. You can still cut it off the cob, if that is your choice.
