One of my favorites! Dont say yuk until you've tried it. Bread it like you would any other fried veggie and fry, I slice mine long, fits the bread better that way. Fresh tomato from garden, not fried and not green, a little garlic, pepper jack cheese and grill that baby! Oh I'm in heaven this morning......Yummy. Oh i forgot, low carb bread....LOL you gotta make up for the cheese and the cuke!

You are my kind of girl. Yummy.

Sneed 07-29-2011 06:59 AM

Sounds like something to try. I like fresh tomato and cucumber sandwiches, but never tried this way. Yum!

MIJul 07-29-2011 07:15 AM

Could it be grilled without frying the cuke first? It sounds delicious. Thanks for sharing! :-)

I used to fry cucumbers when we had a a garden. I was pretty much the only one who ate them. Good idea slicing them lengthwise, wish I 'd thought of that.

Cukes fit right in a mixed grill.Along with sliced zucchini etc.I brush them with italian dressing. There's never a sliver left.

Oh yummy this sounds good. I have never had fried cucumbers but I always make me cucumber sandwiches with tortillas. I just peel the cucumber (fresh out of the garden is even better) slice it and put it on a warmed tortilla (of course these are even better if the tortilla is homemade) but yum yum. I have had these since I was a little girl. I went to a quilting retreat at my friends house the first time I decided I needed a tortilla cucumber sandwich and they thought I was crazy but now they eat them too. I gotta tell them about the fried cucumbers with all the grilled things on it. Thanks for sharing this.

I need to try this. I have 2 cucumbers in the fridge now and the only way I know to use them is salads and marinated.
I wonder how mushrooms would work with them. I love to try new things.

I made zucchini fries in the oven with breading. They were in a Weight Watcher book and they are delicious(4 pts plus).

Sounds great - will give it a try.

Winkee 07-31-2011 04:23 PM

I am going to give it a try. We have lots of cucumbers and lots of tomatoes.

Suz 07-31-2011 05:09 PM

We eat a lot of veggie sandwiches at my house. I will definitely try this one.

One of our favorites is a PBOT: peanut butter, thin slice of Vidaila onion, and tomato, lots of pepper, salt on lightly toasted Ezekiel bread (or bread of choice).

Do not YUKE until you have tried same.

PurplePassion 08-01-2011 09:08 AM

How thick do you slice the cukes , to bread and fry them? I have never tried them , but love batter fried anything.
