Fried rice - sort of -
 
This tasted really good today!

1/4 cup chopped green pepper
1/4 cup chopped onion
3 large mushrooms - cut up
1 slice ham - minced
1/3 - 1/2 cup cooked rice

(The above measurements are approximate)

Saute in butter until green pepper is tender

Add 1 T water to 1 large egg - mix thoroughly

Add egg mixture to first five ingredients

Season with 1/4 tsp powdered ginger and two (or so) teaspoons of La Choy soy sauce.

Cook until egg is "set".

Delicious!

I was by myself for lunch yesterday (sometimes a wonderful thing!!!!!) and this was what I found available.

A dab of cooked rice was in the refrigerator - too much to toss and not enough for everyone - I think one could add some shredded carrots, shredded cabbage, zucchini, jalapeno peppers, broccoli -

It's very forgiving as far as ingredients go.

It works out better when uses a non-stick pan.
