Garden Salad

I can eat this 3 times a day when the garden is producing:

chopped cabbage
Onion sliced thinly
Cucumbers chopped roughly
tomatoes cut roughly about bite size
2 Tblsp sugar

at least 1/2 cup real mayo
salt & pepper as you like

Oh yes!
Is there anything better than summer veggies???

Sounds good, but I would leave out the sugar. I can find a very good sugar-less dressing and be good to my body.

Oh man, I love the summer and the farmers market. I used to have a large garden plot in my backyard but had to give it up during a bad health year and never got it going again.

I had a bit of emotional turmoil recently and was eating all the processed things I loved, but now is a great time to eat salad so I've switched back to my healthier eating.

If you have any, put in a few raw peas into the mix, or maybe try cottage cheese instead of mayo. Yum!

I'm definitely going to try this one. Thanks

Looks simple, but yummy! Maybe you could substitute monk fruit, or stevia for the sugar, since its just a small amount needed. Also, FF mayo would work too.

I'm with you Iceblossom...I went off track and the weight went right back on. Now I'm back on track and I feel so much better. I'm blaming my downfall on my DH, who brings home ice cream at least once, or twice a week. :D

I love salad, but I'm the only one in the house who eats it. So it's hard for me to eat an entire head of lettuce or cabbage without having to throw a big chunk away, or feed it to my chickens! But during the time when I lived in Mexico with my first husband I ate street food, much of which is fruits or veggies drizzled with lemon or lime juice and then lightly salted. In a salad, the juice really enhances the natural taste of the veggies! I always use that on my salad now, and on those occasions when I also want dressing, I put it in a small condiment dish and will dip the tines of my fork in it to get the dressing for one bite of salad. Now that I do this, I use about 1/4th of the amount of dressing I used to use!

I love fresh garden salads. This year our growing season was so bad that the garden only produced green beans. I grew a few tomatoes on the front porch. I love a hot wilted lettuce salad in the summer but that a thing this year.
