German/Hot Potato Salad recipe needed
Hope someone out there can help:
I am looking for a recipe for German/Hot Potato salad that uses minimal vinegar (husband hates the taste of vinegar, but likes this potato salad...go figure). Recipe can be for either top of stove or slow cooker. Thanks in advance! |
I've been making German Potato salad for years since marrying into a German family. Here is my recipe with the
"approximate" measurements, but it does call for significant amt. of vinegar. 6 medium potatoes cooked with skin on 1/2 # of bacon - cut into small pieces and fried crisp 3/4 cup chopped onions 2 Tbsp flour 3 Tbsp sugar 1/2 tsp salt 1 tsp. celery seed 3/4 - 1 cup water 1/2 - 3/4 cup white vinegar Drain the cooked potatoes, cool and then peel and slice into a large bowl; set aside Remove the bacon from the pan and set aside. Fry the onions in the bacon grease until transparent, then add the flour, salt and celery seed. Add the water and vinegar and cook until the mixture thickens. Pour thickened sauce over the sliced potatoes, add bacon and serve warm. We keep adding sugar if the vinegar is too strong and I usually make a larger portion, so the amounts can vary to get the right thickness to the sauce. My husband just requested a big batch to have on hand while I am out of town this week:). He likes it both warm and cold. I hope this helps. |
I wonder how this would taste with sweet potatoes. I can't have white potatoes (nightshade avoidance to help with rheumatoid arthritis.) It would be worth a try because I like both German potato salad and sweet potatoes. Thank you for the idea.

Sounds real close to my recipe. I also add parsley, butter and brown sugar. Apple cider vinegar too!

I was once served lukewarm potato salad tasting of vinegar. I actually walked it back to the restaurant kitchen and complained. They apologized and brought me HOT potato salad. Ha! I'd never had German potato salad and thought they had served me something rancid. Everyone in the south knows, you don't eat lukewarm potato salad that has started to go off. : )
Live and learn. But, I still can't abide the stuff. |

learned about hot potato salad while traveling in Germany, love the stuff. I will keep this recipe so that I can make it. DH's first wife (she passed away) was German so he learned to eat German food and speak German...we are Mexican, so go figure.

This one is similar to the one above. The method is different, though. I've used it several times. It's from Guten Appetit, a community cookbook published in 1978, by the Sophienburg Museum of New Braunfels, TX. (Texas had numerous German settlements.)
Hot German Potato Salad 8 medium boiling potatoes (2 1/2#) 5 slices bacon 1 Tbsp. flour 1/2 cup water 1/2 cup vinegar 2 tsp. salt 1 tsp. sugar 1 Cup sliced green onion, including tops 2 tsp chopped parsley Scrub potatoes, but do not pare; cook until just tender in boiling water (1 tsp. salt in each quart of water). Fry bacon until crisp; drain on absorbent paper. Crumble into bits. To drippings remaining in the pan, add the flour and blend well; gradually stir in the water and vinegar; and cook over direct heat, stirring constantly until mixture boils and thickens. Add salt, sugar and sliced onions. Peel and dice the hot potatoes, add crumbled bacon and pour on the hot dressing. Mix lightly, add parsley and serve hot. Serves 5 Contributed by Claudia Skoog In a pinch, I've used canned sliced potatoes with this recipe and it worked well. I think it will serve about 8. Boiling potatoes are red potatoes. bkay |
