need some recipes for one pan/skillet ground beef. Kind of like homemade hamburger helper. Some make ahead and freeze portions for later. ???

Here is the first casserole I learned to make in Home Ec. class. It was the first casserole ever made in my grandmother's kitchen. I loved it. It's very good and makes a lot. You can add bell pepper, garlic, and use cream corn and any cheese you like.
Tallarene 3 Tablespoons butter 1 medium size onion, minced 1 lb. ground beef 1-10 1/2 oz. can tomatoe soup 1 1/2 cups cold water 1 teaspoon salt 2 cups uncooked wide noodles 1 can whole corn 1 cup grated cheddar cheese salt and pepper to taste Melt butter; add onion and saute over low heat until onion is tender. Add ground beef and cook until browned. Add tomatoe soup, water, salt, noodles, and corn. Mix; cover and cook slowly 10 minutes. Sprinkle with grated cheddar cheese. Cover; steam 25 - 30 minutes. |

onebyone -- I like your casserole since I can use gluten free noodles and serve it to DSIL. Sounds yummy.

My DH and I love this: 1 box Spanish rice prepared according to the pkg. 1# browned & drained hamburger and 1 can drained whole kernel corn. It makes alot and it freezes well.
Sometimes I divide it in half and make a Mexican casserole with one half. Just add 1 can drained & rinsed black beans, 1 can Ro-tel ,cheese and bake. |

I make a beef stroganoff that is a favorite of mine but am away from home now and don't know the exact measurements. The ingredients include hamburger, onion, cream of mushroom soup, s&p to taste and sour cream stirred in at the end and noodles. If you google stroganoff I think you will find several recipes. You can always throw in any veggies you want.

My DH loves stuffed peppers. Sometimes I am feeling lazy so stuff the peppers with frozen Italian meatballs and cover with spaghetti sauce.

Way back when, I was a Girl Scout and remember making ground beef and vegetable soup on a camp fire.

RE: stuffed peppers. Love the meatball/red sauce idea!
Spanish rice a roni one...do you cook it and grnd mt first then stuff or all raw, stuff and bake to cook? |
I brown ground beef with green pepper and onions, drain and add cream of mushroom soup and simmer on low for about 10-15 minutes then add either 1 can drained green beans or 2 cups frozen. I serve it over noodles. You can also add mushrooms if desired.

Here is a simple one from my grandma when I was first married 45 years ago
Hamburger - browned One can green beans drained Dump both in casserole dish, mix up a bit Dump on one can cream of chicken soup Then put tater tots on top to make it look nice Bake an hour at 350 These days I might test browning the hamburger and maybe add some onion Then in the same iron skillet add the beans and soup. I think I would cook it until it is bubbly then add the tater tots and put it low under the broiler in the oven... I think as soon as the tater tots are done it could be eaten. |
Waaaay before hamburger helper and packaged meals, when we cooked everything from scratch, and money was tight, I cooked some of the wildest concoctions.....some good, some not so, but family was fed and content.....when kids would ask what's for supper, I would say dog food and bird seed......we had both....that let them know mom was being the mad scientist again. Some of these concoctions I have carried thru to today......I, just me now, call them "garbage", but it's one way to clean out that one carrot, 1/2 onion, limp celery, left over pasta.......or whatever with a can of Campbell's some kind of cream soup..........
