Have a Muffin (or 2)
 
In large mixing bowl:
1 cup all purpose flour
1/4 cup sugar
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp salt

In blender or mixer
2 ripe bananas
1 egg
1 tsp vanilla.
When mixed stir in 1/4 cup sour cream

Pour wet over dry and just mix until moistened. Fill 12 regular muffin papers.
Add what you want on top of batter & use a skewer or chop stick to push down in batter.
Bake 350 for 15-20 minutes
Additions can be chopped walnuts, mini chocolate chips, chopped dates, chopped apple, drained chunks mandarin orange etc.

I freeze 4 or 6 in a freezer bag.

I made a large banana cake this week and with the cooler weather, it went fast. I haven’t baked much in the summer heat but banana muffins sound good with crumble topping!

This sounds perfect for today....2 "dead" bananas hanging around in the freezer and even some sour cream in the fridge! and yes Tartan the crumble sounds like a great topping for this rainy day, thanks for the recipe!

I made them fairly big so only got eight 😀
